No baking, No steaming, Non dairy, the most beautiful and simplest mooncake I have ever made

No baking, no steaming, the hottest rice mooncake is very simple. It is said that it is a refreshment originating from the Southern Song Dynasty. It is fresh and elegant, low in sugar and low in oil.
Ingredients: (10x 50g)
50g glutinous rice flour
50g rice flour
25g rice syrup
70g water
12g vegetable oil
1 tsp matcha powder
300g red bean paste
** The rice flour and glutinous rice flour should be stir-fried first, save a little for hand kneading
** The rice syrup is colorless and transparent, you can boil sugar and water for replacement. The ratio between sugar and water could be adjusted according to your taste and the sweetness of the filling
** Vegetable oil can be cooked beforehand and cool for use
** The dough must be very soft so that it will not crack during molding
** The rice mooncakes can be eaten directly after they are shaped. After refrigerating, the skin will be denser and the taste will be better.

I have made red bean paste a couple of times, but I wanted to ask: Is it ok to add spices to it? Because I added some ground cinnamon and some ground cacao nibs and it's amazing. But I'm worried about sharing it with my friend's very traditional parents....

Traditionally red bean paste contains only red bean, sugar, oil and water. But if you like it with spices, I think it could be definitely ok. I would also try it sometime later.

The dough outside looks dry in the video when she cut it. How was the taste and texture of the dough when you made it? Did it taste like raw dough at all?

@@tweewin yes it's really dry, always need to put water every time the dough start to dry...the dough taste like 80% raw...and i can't eat it...end up i put the mooncake in my air fryer for 5 min and it taste so good and chewy...

@@nanalasagna9189 thanks for letting me know! I can certainly see the dryness when they cut into it in the video. I would have put the dough in the microwave and heat for about 3-5 minutes to steam cook it, which is an easy process as well. :) Thanks for trying and sharing your results!

这两种都有颜色,饼皮会是浅黄色,如果你不介意颜色的话可以用,其实最简单的是用白糖加水煮开放凉,100m水里加一大勺糖就差不多了

大米粉是粘米粉,不是玉米淀粉 大米糖浆是大米淀粉里提炼的,跟玉米糖浆类似 你可以不用糖浆,直接用糖水,糖和水的比例可以根据你的口味和馅的甜度来调整,比如1:5左右

Just simply replace the syrup with water and sugar. You could adjust the ratio according to the sweetness of filling and your own taste.

If gluten is an issue, corn starch is something I’ve used in other mooncake recipes before. But rice flour is mandatory.

Any transparent syrup could be good, or simply water plus sugar, the ratio you could adjust yourself according to your taste

It could be difficult with this recipe. One possibility is to increase the sugar content and let the sugar acts as preservative. But I never tried before.

These don't have preservatives, so if you're going to mail it, I would recommend 2-day post at most or overnight. You can ship with dry ice? That's even better.

@@ricevid If you use syrup, I would recommend you use the colorless one. Otherwise just replace it with sugar and water, you could adjust the ratio according to your taste and the sweetness of filling.

You can freeze finished cakes for months. Just make sure you double or triple ziploc bag them to present freezer burns and smell from getting in.

不知道你有沒有吃過雲片糕,有點像那個的味道,米粉炒香的話味道還好,但跟其他月餅口感是完全不同的。我個人覺得在冰箱放一晚味道好很多,餅皮會濕潤一些

You could simply replace the syrup with water and sugar. Honey has a slight yellow color, if you don't mind, sure it can be used.
