This is a thing of beauty! As. I love ginger, I would add a packet of ginger nut biscuits, mixed spice and butter for the base. And a fresh berry compote on the side to finish it off (just my preference) 😋

Yes, it’s the usual whipping cream (min 35% fat) and you simply whip it. Not defrosted one. Hope it helps.

Я использовала сливочный сыр «Маскарпоне», так как «Филадельфия» у нас бывает очень редко. Маскарпоне высокой жирности - 80%. Внесла небольшие изменения - рецепт коржа (база) ваш, я только его испекла (180°, 10 минут). Корж получился очень вкусный, хрустящий и менее жирный. В итоге корж получился вкуснее, чем само печенье. Спасибо, Вам, большое!

@@DM-fi1lq КОРЖ на диаметр торта 18 см Шоколадное печенье - 180 гр Сливочное масло - 60 гр Печенье растолочь в мелкую крошку, добавить растопленное сливочное масло и хорошо перемешать. Выложить «тесто» в форму, хорошо прижав к дну формы, используя нижнюю часть стакана или заднюю часть ложки. Поместить в морозильник на 30 минут. КРЕМ Маскарпоне или любой другой сливочный сыр высокой жирности - 400 гр. комнатной температуры Сахарной пудры - 90 гр. Чайная ложка ванильного экстракта Охлажденные сливки (35%) - 190 мл Молоко холодное - 60 мл. Желатин - 10 гр. (желирование 500 жидкости) Темный шоколад - 100 гр, нарезанного небольшими кусками УКРАШЕНИЕ ВЕРХА Темный шоколад - 30 гр Сливки - 30 мл Ватрушка Желатин замочить в молоке и дать набухнуть. Сливочный сыр взбить несколько минут, пока он не станет легким и пушистым. Затем добавить ванильный экстракт и сахарную пудру. Смешать все хорошо и отложите в сторону. Охлажденные сливки взбить до мягких пиков. Вылить сливки в сырную массу и все хорошо перемешать до однородности. Набухший желатин нагреть до полного растворения, добавить к нему несколько чайных ложек крема и хорошо перемешать. Затем эту смесь вылить в крем и размешать до однородности. До этого этапа использовать миксер. Добавить раздробленный шоколад и перемешать лопаточкой. СБОРКА Форма + слюда (низ и бока) Корж + крем = разровнять. УКРАШЕНИЕ ВЕРХА Шоколад + сливки = растопить и ложкой выложить в разных местах по верху, жидкого еще крема. Затем взять тоненькую палочку и хаотично двигая по верху торта палочкой как бы смешать шоколад и крем, как бы создавая рисунок. Готовый чизкейк убрать в холодильник не менее чем на 12 часов
