    it's not the same as usual clever dripper but i've done clever drip brews with 2 or 3 fills of water. Probably not as optimal - more prone to clogging and you have to take it on and off the cup/server - but the high extraction still possible by doing a second round of extraction with fresh brew water

    Yes but not this high of extraction. I've done it for years that way. Much less efficient and capable.

    @@LanceHedrick fair, the chamber under the paper and the valve doesn't help and also the screen on the tricolate probably means you can keep agitation down. In general i think when people are doing it with the clever it's more like 1:18-20 ratios, suggesting the higher ratio is needed for more extraction in comparison to the 1:14 here

    Exactly. I can hit 25% with the tricolate by itself. The idea is to get the insane tds AND extraction with a short ratio to maintain high acidity and aroma.

    Late to the party so Lance, you may not see this - but I finally tried this now that I have the Switch and Tricolate on hand. Didn’t get it perfect the first time out and struggled with air pockets under the filter. But even so the results were really interesting. Super intense flavors and and a very rich body, ended up absolutely delicious! Not something I’ll do daily but I could definitely see doing this occasionally with certain coffees. Plus it’s just fun pushing the boundaries of extraction 😀

    How bout just using the regular switch base without removing the v60, and pouring onto the back of a tea spoon for dispersion. and then using the WDT tool as you did in the video? Any reason that should not work as well?

    I have this coffee, and really wanted to try the method, so I did my best to imitate this with what equipment I have. Aeropress filter set on top of Switch silicone base, aeropress slides over the top edge of the base and keeps the filter taut over the opening. I balanced the aeropress filter cap on top with a ROK dosing funnel inside to keep the water from running out the side holes and all over the scale. Main difference that I can see is that (at the same dose) my coffee bed was deeper. I suppose I could dose down to replicate the depth of the bed in this recipe? Whatever effect this difference may have had, I was pretty blown away by the result! It tasted exactly as you described, and was one of the best cups of coffee I've ever had.

    Very similar concept to a beer brewing technique of "batch sparging". You'll generally get slightly higher extraction of the two volumes of water used are equal in drained volume, so if you add the volume absorbed by the coffee into the initial step instead, you might gain another couple little bit.

    Just came up with this myself using a pourover still and a paper cup with a hole and cone filter instead of the pourover cone and it was amazing. Google searched if it's an existing method and it brought me here :D

    Tricolate is my daily driver! My go to recipe is kind of crazy, but I think it accomplishes what you did here without the switch! I do a 1:10 ratio - 30g coffee (very, very fine ground) / 300g water. I pour 70 - 90g of water for a bloom. I give it a mini swirl right after I pour then an aggressive swirl at the end of the 1 minute bloom. Then I pour in water to 175g. I let this water drip down for a bit then do a medium swirl around 2 minutes. Basically what I am trying to do is get the bed of the coffee stable in the beginning of the brew - this helps a ton with clogging! Then I pour the rest of the 300g of total water. I dial in the grind for the brew to take 5.5 to 7 minutes. I've noticed that if you use a crazy small ratio and hit a longer brew time the Tricolate is an amazingly forgiving brewer. I've never gotten any "over extracted (uneven extraction)" flavors! Tastes like straight up fruit juice!!!!

    Yeah that's great! Not very similar to this, but is a solid recipe and one I've tried a very close variation of with my 10 months with the Tric! Great job! If you have a switch, try this out. I think you'll be shocked! Way different taste, extraction, etx

    Thank you for sharing this. I managed to duplicate your method with a DelterCoffeePress (remove the rubber showerhead, put a 58mm puck screen on the bottom of the coffee grounds chamber with a paper filter), and a Hario switch base which can be perfectly and tightly fit into the DCP coffee chamber. I also lower the dose to 14.0g for the small diameter of the DCP. In the end, I get a cup of coffee at 2% TDS and 24% EXT and it is tasty.

    Incredible video! I’ve been able to hit similar numbers with a Ground Control brewer. A bit more agitation is involved due to no shower head and the stir rod, but the contact times are lower to account for that. I’ve always thought the switch would help make a similar profile for single cups, and you proved that correct. Can’t wait to play with this idea soon!

    Yeah! Ground control can hot some high numbers. There's some pressure there, though, with the sucking of the coffee down and out, yeah? That adds a pressure step which can muddy the cup. Though, I could be mistaken!

    @@LanceHedrick You have a point. They do similar things to the coffee. But pressure is more aggressive to the extraction than vacuum. You’re pulling instead of pushing. This is why the lower contact times help. But in general I’m excited to try the switch + tricolate.

    Check out the Bonavita 1900TS…it has a pre-infusion mode and a distribution design that is supposed to deliver a pseudo pour over experience from a drip machine. You set your grind to where you’d do your pour over (and depending on bean, I’m usually around 62g/1000g ratio) but you brew in around 5 minutes (including the initial :30 pre-immersion). Water temp is 195 degrees C.

    Very similar to the "IMMERCOLATION" brew method that was debuted in the Philippine Brewers Cup 5 years ago. Immercolation has hyper-stable slurry temp, no bypass in the first, immersion phase, and then untilizes bypass as a tool in the second, percolation phase. Another benefit is the utilisation of carbonic pressure to punch out the acids early. Immercolation is also 50x cheaper than a tricolate-switch system since it uses off-the-shelf vacuum flasks. At the brewer's cup, the method scored very consistent TDS readouts at 1.41, 1.40, and 1.39 for the 3 cups in compulsory on 16g of coffee to 240ml water, leading to an average of 18.33% extraction rate on what would eventually be all 9 cups served in competition (compulsory, elimination, finals). The method is super reliable and consistent. Unfortunately, the Finca Nuguo tree-dried natural geisha brewed in the finals had a tasting note of "darjeeling tea," and one of the sensory judges did not know what darjeeling tastes like, so he admitted to substituting the tasting note for lipton black tea.     Just watched. That is cool, but not similar at all to this. Would end up with a way different cup profile, as you even note it being just 18.3%. what I'm doing has a much different approach. The only similarity is the fact that they both use some immersion and some percolation. The percolation here isn't really direct as it is in the video you sent.

    ​@@LanceHedrick this is true, immercolation does rely more on precision pouring in the second phase. Now, the 18.3% Ex-R is a factor of the recipe by decreasing coffee dose and increasing phase 1 time. Immercolation has hit 19.5% Ex-R in lab, just not in BrC competition, which at the time perscribed that 18.3% from a 1.40 TDS was what was acceptable as "properly extracted coffee." Now we know better and the SCA needs to catch up.

    That makes sense. Even at 19%, that's quite below what these are able to hit, which is likely almost 30% I'd at a 1:20 ratio. Or with 3 phases. In any event, cool to hear!

    Loved your segment Lance but I also have a question. I use the moccamaster by technovern which has the clip on the side so you can stop your process just like in your show on percolate immersion. I've been using a similar technique for a few months now and my pour overs are very well received by my coffee drinkers as well friends. Im anxious to try your ratios as well as your grinds. I was typically letting my coffee basket fill up to about an inch above my grounds and then stop the water by pulling the beaker back disengaging the automatic safety which stopping the flow of water. I'd then work my spoon around the bed gently pulling my grinds to the center and gently move them around until they are all saturated. After the expansion of the coffee would stop I'd do this once more then allow the coffee to pause for about a minute. Of course fresh light to med Roast has the most expansion so it takes a few additional seconds to work it around. I'd then allow the water to flow again in the chamber and release the coffee to begin to flow into the coffee pot or thermo container that technovern uses. I believe this the essence of what I was watching you do minus the veribles of the exact microns and ratios which I'm using the standard 1:15 and I don't have as good a grinder as you do. I do have an astra 050 series and a couple of Baratzas 270wi and cheaper Baratzas.. I love the technivorm because of this features plus the constant perfect brewing temperature coming out. You could actually put your scales beneath the pot but I generally just let the water set an inch above the grounds to help with the coffee bean expansion. I'd love it if you have any tips for me in this area. I'd love you hear your comment on. The technivorm mocca master as well. I use commercial one in my coffee shop and they make a one for smaller 10 cup capacity for the house I usually run 3 to for of these makers at the coffee shop so talking about fun doing this process X 3 or 4 at the same time. Yes I've had a few disasters because I forgot to open the gate lol!

    TDS=Total Disolved Solids. TSS=Total Suspended Solids. They are different things. The distinction between TDS and TSS. A particle is considered dissolved (TDS) if it can pass through a filter with 1.5 micron openings (1/17,000 inch). If the 1.5 micron filter stops a particle, it is considered to be suspended (TSS).

    This is truly ingenious. My daily driver is hario switch with the larger 03 cone. Have you tried the "water first" approach with the modded tricolate? Put water first, then coffee, then stir with spoon, etc. Heavier / larger grounds sink first so less clogging, and you can go finer.

    I considered it but chose not. The successive pours would agitate it the same way. Plus, I didn't want to go finer because that would increase chances of chanelling. I was already pushing silly high extractions BUT give it a try! Let me know what I passed up on lolol

    I've tried to emulate it as close as possible with the tools I had. Which means only the base Switch and chopstick instead of WDT tool :) Also with a bit less coffee. So: 1:14 ratio with 15g of coffee, 4 min immersion, drawdown, 4 min immersion again. To emulate the dispersion screen I poured slowly but also made sure that only droplets reach the water so there is not much agitation in the bed itself. It was definitely more intense than what I'm used too! And I even should have been grinding finer (will try for my next brew), because I know this coffee could have been more sweet. So I would definitely recommend to try this for those who has only the base Switch. I'm sure it's not the same as with the tricolate, but it's still an awesome coffee and unique experience. Also the recipe is super easy, it's one of the easiest recipe right after just straight immersion :)

    Hey Lance, after watching the video and reading your responses, I realize one of the key advantages for this setup is the minimal agitation. I might've missed it, but what are the negative effects of over agitation? What would be different if water was added directly from a kettle vs a shower screen?

    This is a fascinating idea! I don't have a steep and brew style brewer in my collection at this time, but I'm looking forward to experimenting with that method at a future time! I've been using the tricolate for a few weeks now. I can't find the time stamp but I recall you mentioning getting wrinkles in the filter papers. I've noticed that as well. Do you have any information when the newer filter papers will be available? Or a suggestion on making the current papers fit better? I've noticed varying brew times using the same grind and coffee and I wonder if the wrinkle is contributing to bypass therefore faster brews.

    im running late on this clip but meh.... Anyways.... my question. Can u still get the "same" kind of results if you do this method on the aeropress, regular stand not inverted and betwin the 2 pours you put the cap to make a vacum seal so water wont go out? Im asking this bcs i want to try it!! like the videos btw

    Tried this on the Shoondhisa from Rabbit Hole with success, actually have some Wendelboe on hand to try next. My only issue seemed to be during the first steep the filter was lifting up and allowing bypass. After the first drain this problem went away so probably from the pressure differential under the dripper. Might try again with a small bloom to mitigate this issue.

    The issue is more than likely the filter size. The new tric filters won't ride the walls..it's that little bubble from the filter being too big that can allow this

    I wonder if using a french press (w/ external filters like paper/cloth) and just draining it 2x (twice: one in-blooming, one after) will yield similar results. Perhaps a little more agitated since we're moving the grounds by pouring via French Press instead of straight down with this

    Pouring would really agitate the grounds probably too much. Also, not sure how to completely hold off the grounds from escaping with a filter. Plus, it wouldn't have the percolation aspect. Give a try anyway!

    The switch is my daily driver since this summer and I love it. In fact it replaced completely my V60. I upgraded the based switch with the glass V60 03 that fit on it. The only other method I use now are the areopress and the Tornado Duo dripper from Brewista (for an unknow reason this dripper give me a lot more sweetness) But the switch is what I use to rate the coffee I tried :) Thanks for the video !

    Fun fact i also use an old WDT tool i got from etsy (with round edge) to mix the ground before I switched to a true WDT tool (3.5mm) . In fact I had this tool before listening to your WDT video earlier this year (when you talk about 4mm and 3.5mm wdt tool size) I recycled my fist "bad" tool for my switch haha.

    Haha that's awesome! Yeah, I have since gone smaller and use .25 to .35 for espresso haha! And the tornado is solid. Double walled, keeps sweetness high. Will do a video soon.

    Hey Lance, really interesting vid. It seems like this is very similar to a syphon, just with much less agitation and lower temperature, allowing you to immerse for longer and have more control over the brew. Is that a fair observation?

    @@LanceHedrick Vac pot was my first thought too, it brews very full bodied coffee, though I don't have the equipment to see what the TDS is. Heat source isn't a problem, the water at the top chamber doesn't stay at boiling point, once the water is pushed to the top chamber the heat source is basically just heating the air left in the bottom bulb. I've measured the temperature of the top bulb and it tends to stay at 86C using a small propane burner, and doesn't seem to vary much if I turn the burner up or down. The only thing that using a burner might affect is the temperature of the glass when the brew draws back down. I doubt it can get hot enough to scald the brew though. Obviously, the double-steep you do here would be impossible with it due to the way it's engineered, so it wouldn't create quite the same results. I don't know how much difference two steeps versus a single longer steep (since the water temperature doesn't drop much in the top bulb) would make in extraction, though I'm sure it's massively different in taste.

    The difference in extraction is huge. Consider this- if you just put water with coffee, and let it sit, you are extracting coffee with coffee. If you replenish the water in the extraction with pure solvent, you will increase extraction a lot.

    Sorry for commenting on some old video, but I can't help notice that you can actually achieve probably about 90% of the result using switch base with Mugen dripper, combined with melodrip / drip assist / gabi drip master. I'm not sure how the shape of the brewer (conical vs cylindrical) would affect the overall extraction though.

    ... and I though my half half method was pinnacle of coffee experimentation 😅 I basically use Clever, add half water, wait 2 minutes, plunge and pour over the other half. Works really well on Colombians.

    The tricolate has been my daily driver for about a year now and I can't imagine going back to any other percolation brewer (at least for light roasts that I can really push EY on). One thing I've noticed with a single pour recipe is that any input ratio over ~13:1 (counting an initial 60s 3:1 bloom) effectively has no effect on the final extraction yield, so more brew water is basically just diluting the output to desired strength. With a 13:1 ratio I can typically do ~23% EY at ~2TDS. Trying to push EY higher on a single pour by grinding finer is a bit risky since the brew can sometimes really choke out and make you wait like 15 minutes for drawdown. Since the yield is pretty high with a single pour, I never bothered experimenting with multiple fresh pours. But also recently I've preferred high EY, low TDS brews at 20:1 (~23%EY, 1.3TDS) so I haven't really had the inertia to tinker with high EY, high TDS brews. But you've got me curious now, so I might try this tomorrow (without the infusion step) and see what the output is like. Have you compared the results of infusion-percolation vs percolation-only with your double-pour recipe? I'm curious how much additional extraction you squeeze out of the coffee with the infusion step.

    Hey marco! You could simply take an aero press with a prismo and replicate everything I have done here. But, you would need to find a way to release the prismo so that you don't need to use pressure in order to release it. Perhaps finding something that you could push into the valve in order to release the coffee during the draw down.

    Loving your work - how is this different to just using say a clever dripper (water first method), and doing a second pour with the nice flat bed you get through the paper filter?

    Way different. First, lots of water under the bed and outside the paper. Second, not a flat bed so not going through evenly. At a 1:14 ratio, might be able to achieve a 20% extraction with a. Good grinder

    Initially I was thinking of this for the clever, but read your comments. On the aeripress you could do something similar with an inverted immersion brew for the four minutes and then invert and let gravity drip.into.your cup. Would be similar, not require heavy mods or depend on aligning parts not designed to work with each other

    @@LanceHedrick or maybe not inverted brew but using the plunger to prevent the water from pwrculsting through until after the immersion time. Some water might initially pass through and slight disturbance of the bed when the plunger is removed, and let gravity perculate the water through. I must admit I do prefer my chemix and aeripress brews that are essentially filtered immersion brews over straight pour overs, but I'm a relative coffee newbie at the moment....

    @@LanceHedrick I'm not sure you COULD do a second steep in the aeropress, there'd be an awful mess when you pull the plunger out! Plus a lot ofthe grounds stick to the filter so you'd actually lose coffee. But it's zero bypass and combines steeping and percolation, so probably the closest we can get to your method without that crazy kit you jury-rigged together! :D

    For those who do not want to spend the extra money for a Clever Coffee Dripper or something similar. Simply use an Automatic Drip Coffee Maker that stops dripping when the Carafe is pulled out. Pull out the Carafe during the initial brewing and turn the Coffee Maker off when the desired amount is reached. After the desired time, turn the Coffee Maker back on and engage the Carafe. Experiment with the times and ratios. I've found that just making enough for a single Cup is easier for experimentation.which would involve only filling the Brew Basket with water one time. Experiment and have fun. The Clever Coffee Dripper does basically the same thing. Save your dollars.

    Well, these are fun ideas, but aren't anywhere near what I've presented here. You might be able to achieve 22% extraction with that method at a full ratio, but nothing like this. But yeah! I love hacking home drip machines exactly as youve laid it out. Very fun. Thanks for engaging.

    If you can find a way to release the plunger, absolutely. Issue is, you have to push to release, which adds an element to the brew which I think doesn't taste good (fines can get through and it emulsifies)

    Ingenious! In the past I've tried "blooming" in a teacup and then dumping all that into a v60 to continue the brew. A bit clunky but some of the brews were really good. I'd be interested in your thoughts on this approach of not "wasting" some of the bloom water. Also curious what setting on your ode gives you 400um. Your recent alignment video pushed me to switch my ode back to ssp burrs and align it. Boy was that thing misaligned :( 🤮

    Hi Lance, thanks for sharing this method. I've personally tried this a few times but there's this problem. The air trapped between the Switch and bottom of Tricolate always bubbled up whenever hot water is poured through the showerhead especially during the first pour. Any ways to prevent this from happening as I could see the slurry becomes uneven and some coffee grounds being drained to the cup whenever the bubbles formed and pushed the slurry? Thanks Lance !

    i can think of using switch base + hario mugen + melodrip. hario mugen is v60-like but without ribs, so it can simulate the same no bypass. i'm not sure it still can make vacuum between coffee bed and switch's stopper. will try this combination although i don't have refractometer to measure it.

    @@LanceHedrick agreed. the canonical structure makes difference. not to mention that WDT is not possible due to opaque brewer. using chopsticks may saturate the coffee bed, but there is slight agitation. tried it this morning, and the acidity and sweetness are highlighted from warm to cold. but i think i grind too fine, slight astringent on hot. still need to tweak, but better waiting tricolate. hopefully i can grab one here, currently it’s hyped in my country and sold out within hours. Thanks for the experiment.

    @@LanceHedrick i just got my tricolate, and test this recipe, and i need to say it’s very good! it’s very different than using mugen before. i’m just not sure to grind it a little bit coarser since the drawdown on second pulse is almost 5 mins. i don’t know if i can survive this 15 mins TBT. 😂

    If you already have an Aeropress I’d recommend trying the Gagne long immersion recipe (google, it’s on his coffee blog) while you wait for the new dripper to come in the mail 😜

    Very interesting video. I have a switch but I struggle with the end bed being super muddy. Not sure what I am doing wrong. Went back to espresso. I like trying my coffee with various brew methods to see how it tastes.

    Not quite. Too much agitation and no percolation..if you have a prismo, you could emulate but would need to figure out a way to unlatch the plug 😉

    Yeah I've tried every which way to replicate this. It doesn't work same way, but doesn't negate a decent brew! Just can't reach these extractions with gravity only outside of this (thus far...) I'm sure someone will find ways to improve and make this a separate brewer altogether. For now, though, I'll hack!

    Hence the name being "percolative immersion." It isn't percolation, but there is a percolative element of the coffee going through the grounds, using the grounds as a filter. Way different from switch based on many elements, but to name a few, bed shape, bypass, bed depth.

    No. There will be many too many differences to count. 1st, you would not be using the bed as a secondary filtration. 2nd, you would not be having the percolative phase. There are more that I could name, but I've got a lot of comments to get to lol! Thank you for watching and for engaging

    I have the NextLevel LVL-10 "zero bypass" brewer. Similar to the Tricolate but larger. (I presently make iced coffee with 280g ice + 560g brew water: 90g bloom + 70g bloom + two 200g pours.) The NextLevel has a rubbery food grade silicon bottom, so I'm thinking I can just slide a spatula or something like that under it and get it to seal well enough to replicate something like this. Or I will make a big mess. We'll see.

    Is this still possible with the Tricolate v2? I tried this method this morning but no matter what I did I couldn't stop the air from bubbling up from underneath the filter, causing water and coffee grounds to escape.

    damn lance dont make me buy a switch! Ive had a tricolate for probably like 8 months and dont think ive ever made a cup that was good, tried many recipes and ratios with mostly washed Kenyas and Ethiopias. Had that exact coffee a couple months ago and didn't even try it in the tricolate bc I didn't want to waste it lol

    I tried this with a low dose and higher water ratio, the filter paper flaps keeps trying to let air out from the bottom, pushing the grounds out 1 side and letting grounds into the final product.

    My question is, if your immersion time would be 1x8 min with 100% amount of water and not 2x4 min with 50+50% would there be a difference in TDS?

    I would wager yes. You should get a higher TDS from 2x 50% vol at 4min than 1x 100% vol at 8min. Immersion should result in the distribution of your coffee particulates into the water phase approximating equilibrium - no more will dissolve until the equilibrium is forced to shift. You should get a TDS based on the distribution coefficients of your analytes, the brew ratio used and the theoretical max extraction yield. If you follow extraction theory, multiple extractions result in higher extraction yields (diminishing returns, yes, but using the same volume of solvent in smaller aliquots exploits the distribution properties and thus you end up with higher yield) Pushing your EY up, with the same volume of solvent, pushes your TDS up.

    I know this is a off-subject for this video, but do you actually use your Smart Grinder Pro and if so, have you done any modifications? I use mine with a single dose hopper from a local 3D printer to Seattle on Etsy, only going back to the regular hopper for cold brew grinds due to the amount needed. It makes a lot of boulders and fines, but after using the Kruve for a couple months I find I enjoy the cup from the regular grounds over the filtered grounds, as dumb as it sounds. It just tastes fuller to me. Overall I'm just waiting for a better electric grinder that is as compact and easy to maintain under $300 but seem to be at the point of diminishing returns. I did very much enjoy your recent $250 grinder video, but since I'm only making pour over, I'm not sure if it's worth the investment. Also, I love that you sang that No Doubt banger. Been simping for ol' Gwen lately haha.

    I’m assuming “paperclip” is basically the same principal as the hor d'oeuvres fork thing I mentioned in a lengthy comment about my version of the immersion/percolation hybrid breaking the seal of the plunger to let it drain and whatnot. It doesn’t surprise me that other people have the come up with the same thing haha. Wish we could just have a product specifically designed for this stuff instead of mishmashing this stuff together. I have settled on another method now that still uses basically the same principle as my last comment but now I grind very fine (9 on the JX-pro) and do the same stirring 20 times inverted and cover, press air out, and flip as swift as possible with a gentle swirl. Now I let it sit for 1:30 to create that gradient flat bed, and press lightly aiming for about 4:30 more to finish. I couldn’t get the filter to not choke unless I ground super coarse and I didn’t want to drill out my aeropress filter holder for more drainage area. :/

    Yeah, but this has no pressure, so no bypass of fines and no emulsification. What you're describing is similar(ish) to the long Gagne AP method. This has no pressure outside gravity Perhaps I'm reading your comment incorrectly!

    @@LanceHedrick no you are reading it right. My previous comment on another one of your videos (a while ago) described something I noticed about stirring up the immersion a lot and allowing the particles to settle allows the bigger and heavier particles to fall first and the lighter smaller ones to settle last. This creates a sort of gradient filter effect where the larger coffee particles prevent the medium particles from moving and the medium prevents the small etc. So long as I do not apply too much pressure (hence the 4:30 long press) I get a very clean cup. I was allowing the gravity to do the work previously but the drawdown was far too long so I ground finer to be able to use additional pressure and it seems that the smaller average particles are able to filter out the fines a lot better than how coarse I was grinding for the gravity drawdown that kept choking up anyway. Any coarser and the average particles were too large to keep the fines on top.

    Sadly, this has never happened for me in any situation. Nor in any scientific experiment I've seen. In all of them, fines go down with stirring up clog and choke brews.

    @@LanceHedrick I can definitely cut the puck left over from my aeropress and see layers of fine on top of grainy and that that the top is all shiny and smooth and has the consistency of paste while the bottom near the filter is mostly normal grounds. Almost looks like one of those cheap fudge cakes with fudge icing on top. I’ll dm you a picture on Instagram or something. I’m not saying you are wrong when it comes to the studies or your experience I just think there could be something we can exploit here because it seems to be different. Perhaps you can find a different explanation to what is happening and maybe my explanation is totally wrong. I would like to get to the bottom of it and know the truth whether or not I’m right about the behavior.

    What is the diference between doing the same with the v60 cone instead of tricolate (besides the fun in making your own brewer)? After 4 minutes of immersion, I think bypass wont be an issue when you drain the coffee. Would you mind testing it and posting the results? Thanks Lance!

    Yes, bypass is still an issue in that water is sitting outside the filter and about 80g of water below the bed. And, the fact it is a conically shaped bed with affect extraction.

    You can also do immersion with the tricolate when using one of these IKEA Övermätt condoms! I expect this is even better as the heat is contained a little bit more. I will try it!

    @@LanceHedrick Sooo the Övermätt thingi is working! Its a little fiddely but I guess your approch is it too ^^ However my brew took 'a little bit' long. 30 minutes. I ground my Ethiopia Anerobic on 7 clicks with my Commandante which should be 437.5 microns. I got 28.1% extraction and 2,33 TDS but after brewing for so long it was close to be cold :D But as you described. HEAVY body and pretty accidic buuut very tasty.

    30 minutes?!?!? Wow! That's insanity! And 7 clicks has a burr spacing of about 210 microns, which would be like 300 peak size I'd imagine. How did you quantify this?

    @@LanceHedrick somewhere I read that a click on the commandante is 62.5µ. Did another brew with my normal 15 in 330 out recipe with 12 clicks and 2 times 4 minute steep wich was also pretty good. will today try your recipe on 12 clicks again ^^

    Each click is a space of 30 microns. So, being open 30microns, that means something like 50micron or so grounds could make it out. Hard to know unless you use something like a kruve brewler

    Has anyone tried brews with the tricolate without the dispersion screen on top? I read that convection currents help increase extraction in immersion brews so I’ve been taking my top off after pouring to see if there is a noticeable difference. Im still dialing in my Vario and, frankly, am questioning it’s consistency since I haven’t done the alicorn mod yet, so I don’t trust my results lol. That or extraction is already so high in the tricolate that the little boost won’t be perceivable in the brew.
