It's Sodium Citrate, Acidity Regulator. Stabilizers has Number Series 400. Like xanthun Gun 415

Freeze them instantly after peeling. Use cold water to wash, then freeze immediately. It might reduce browning .

Mam esse products ke liye freezing hoti h. Preservatives km ni krega thepla mein. Jese hi thepla ready hote h, garam garam ho freezer mein Rakhte h. Single single roti ko freeze kerna parta h.

For Rotis we use IQF that is Individual Quick Freezing. But Millets roti already hard hoti h. Single single roti ko quick freeze or blast freeze kerna prega. preservative will not work much. 100% millet will become very hard roti.

Sugar itself is preservative. Have high sugar, pack hygienically. If packing in TIN pack. Close the tin and Heat tin pack in hot boiling water for 15 min.
