I am 45 and have never been able to make good flour tortillas UNTIL i watched one of your videos and it finally clicked! My kids actually enjoy eating my flour tortillas now instead of throwing them for the dogs to catch.

😅😂 I can't stop laughing because I literally made this last night 😂 I'm a black man and of course my ex is Mexican but this is the first thing her grandma ever made for me to eat. I had to learn how to make it and I make my beans just like you. smoked turkey tails work really good too 😋

That’s some crazy good food right there!! I’m not Mexican or even close, but I grew up out in the country in Ohio and beans are a staple of country living! 🥳

There was a restaurant called Moderna’s in Piedras Negras, MX. The best refried beans, I’ll say, ever. My gringo uncle asked them the secret. They were finished off in the oven. I told my friend from Colorado how good my gringo mother’s beans were so good. I said mom used a crock pot. My friend said, yes, never let them boil. I use Goya beans only. They use a 10 min boil/set. I know from experience, soft water really helps beans cook better and remain soft and not bust open. It’s true abt the lighter bean. Learned that by default too. I love her vids. BTW, I was raised in Eagle pass, raised in quemado Vally, Maverick County. I love Tex-Mex. My gringo grandmother had a restaurant. All of her food was from scratch. I bought a can of enchilada sauce last week for a family. I’d never even bought a can. They like the Taco kits. Bless their heart. As long as they pay me, I’ll cook what they want. 😊

I made a pot of frijoles de la olla, no hamhock, so when I refried them for breakfast this morning, I fried one slice of bacon. When that was finished I added to that bacon pan one ladle of whole beans, added a little cooking liquid and cooked them for a while. Then I had to put them in the blender because I don't have a cast iron skillet. I pulsed it once and they were amazing. Thank you, Rachel.

I can't tell you how much I appreciate your channel! More than the recipes you have taught me the lesson of slowing down and having patience. I've never been a patient cook or baker but when I watch you, you make it so obvious why slowing down, being prepared and beginning in a clean kitchen is most important. Right now I am making the apple fritters, the apples are cooling and I imagine this is what heaven smells like.By the way, I love the Mexican word for mortar! I keep saying it to myself. Best of luck and thank you! Also I'm 66 this year, have made thousands of meals,and still learning something new!

I watched your video on refried beans. When I told my grandson I was going to make them, he said make sure I used a ham hock. I told him I knew which recipe to use. Thank you Rachel.

I find it difficult to use ham hock. I boil it too before using it in collards, black eyed peas, cabbage, snaps, etc. But it’s hard for me to get the right size meat for the “liquor”. The butcher will cut it any size I want. If it’s not “tasty” enough, I’ll use Goya powdered Jamón. They have low sodium powder now. I’m still debating it. Lol😂

I'm going to stop watching your videos!! Only because every time I do, I get so hungry and want to go to the kitchen and try your recipes myself!! Every video of yours I watch, I enjoy so much. Thank you, and i do hope you know, I can't stop watching your videos. Gracias from San Antonio ❤

Hermosa! Now these are the frijoles that I remember from my childhood! My mom would make them with bacon instead of a ham hock, they were delicious! You have become one of my favorite cooks to watch on YT. You explain everything so well and I just love the fact that you live in OH and Texas. I lived in Texas for 3+ years and grew up in OH. I was in TX with my husband until he passed away with cancer, then moved home to OH to be with my kids. Living in the Hill Country was awesome and miss everything especially the wildflowers. Rachael you probably would laugh how this here woman from New Jersey makes fried beans. I take 2 cans of beans put them in a fry pan with garlic and onion and fry it all up. So from now on I will make it correctly, what does this Irish woman know. Thank you my lady I just learned something

Well I found the chicken enchiladas but that was my first view then I found this one and plan to watch more. And the enchiladas were delicious as you said they would be. I’ve never had any better than yours so I made sure to write down the recipe and it’s my keeper recipe in the recipe box. I’m looking forward to make the beans and your rice because I make them but mine aren’t that great so I know yours are going to be my favorites! Oh man, that's looks so good!! Nothing like homemade beans and ham hock. I love the broth part of the beans too. Mama always served beans and ham hock with cornbread. By making such a huge pot you can have beans and ham hock with the broth and have enough left over to refry some also. Oh Yeah! Now I gotta cook some!!! 💕💕 Thank you.
