Don’t worry probably one of the steaks is dry ageing in oyster sauce for a year or two for a more balanced comparison

I don't get it... Guga said the steak is not cooked by fire or sous vide @5:00, it's cooked by acid... but at @3:00 it's literally sous vide.

STEP UP: BIRRIA YAKI-ONIGIRI. Add a cornstarch/potato starch slurry to the consomme to thicken it up. When adding the birria filling to the riceball, add a little bit of shredded cheese inside too. Once shaped, brush the thickened sauce onto the outsides of the onigiri and grill or pan-fry them. Birria Yaki-Onigiri boom
Use the rice water on your plants they love it.

Guga, love your work. I did a 2 1/2 lb standing rib roast in sous vide for 1 3/4 hours at 134°. It was 2 1/4” thick. What has been your experience with cooking thick steaks? When is not enough time and when is too much time. Thanks and keep up the great work.

I did Birria arancini for Christmas this year. I was a little disappointed with the crust using an airfryer to finish but the flavours worked pretty good
Guga I suggest to you that you start watching an anime called shokugeki no soma or in english is called Food Wars. The food experiments that the main character creates are incredible and you should try them. For example, he creates this explosive pearls but infused of kombu dashi that as you know is one of the foods with the most umami of the world for its content monosodium glutamate. And that's just one example. I'll be expecting your videos based on this show.

Hi Guga great video as usual. I recently started doing sous vide, but am having trouble getting steaks to medium rare. NY strip 1-1/2" thick 130 degrees @ 1 hour and 45 mins. It comes out medium to medium well. Any ideas what I might be doing wrong?? Appreciate your thoughts Tony

We have Finger Limes (aka caviar like) here in Australia which I regularly use in place of sauces. They are smaller pearls so it's not an overwhelming burst of lime and they come in a range of colours
You should try Yuzu Kosho (Fermented yuzu peel, chili peppers and salt). It's very popular with beef in Japan.

I've had Yuzu only a few times, I like it. To me it's a bit more mellow than a lemon. You still get a nice fresh punch from it but it's not as sharp. If that makes sense at all.
The Yuzu pearls look similar the 'caviar' pearls in Australian Bush Limes; yellow not green, and slightly bigger

I made those pearls with orange juice and with pomegranate juice and used a combination of them as a yogurt topper as a dessert for a dinner party I threw. Big hit, and they're honestly pretty easy to make for the most part. With lemon juice they're next to impossible without some finagling, tho.
oh god ive bought these yuzu balls before! i love the little trick they use, you can make pretty much ANYTHING into these little pearls if it's a liquid. you could make umami bombs full of meat juices for example; like making a demi glace into pearls, and then decking your steaks with them
