Had to watch the video again. It really surprised me, we have the exact same kitchen utensils. Same frying pan, silicone spreader, knife, glass bowl. The only thing different is the cutting board. I made my own cutting board. You made me feel special, after all you’re a real chef and I follow many of your recipes. Love your recipes and share them with family.

Already make this dish, but Mexican style. Cook the potatoes the same way. Take four eggs and add Pico de gallo. Mix the eggs and pico de gallo and pour over potatoes. The cheese is also different, I use queso fresco with a little cilantro. Pico de gallo; diced tomatoes, diced onion, diced garlic, and diced Serrano peppers . Queso fresco is a semi soft white cheese with a strong flavor. In general they are the same, but the Serrano peppers and queso fresco give it a Mexican kick. Greetings from USA, Mexico
