My current Celiac and Hashimoto's Diet (no flares for 5 years!)

I haven't done an update in a few years, so here's what I currently eat on a general basis to keep both my Hashimoto's and Celiac diseases in remission. I hope this helps you to see what a long-term diet for your autoimmune disease can look like!

    I have celiacs and hashimoto's. Ten years ago I went gluten and dairy free and it helped my symptoms. My asthma, arthritis and chronic infections went away. I still had a carb addiction which made my gut issues worse. I have gallbladder issues.Then the only grain I tolerated was rice. I now went keto which I feel the best. Low carb is the best. My inflammation is a lot better and sleeping better. If I get crosscontaimination I get really sick. I prefer to cook and eat my own food even on vacation.

    It's really encouraging to hear that you have healed over time enough to eat a more normal diet. I've done AIP long enough to see that it definitely makes a difference, but the process of waiting until I can tolerate reintroductions is much slower than I'd hoped. I'm trying to take the long view and stick with it. Thanks for the video!!

    Thank-you this was very helpful! My symptoms are quite different than yours and 5-7 symptoms come to me all together in one go, so it really becomes difficult for me. And i liked the the part you mentioned stress, because ive been under a lot of stress, severely stressful condition for past 5-6 years and that is why my lifestyle changes didnt work on me! I always kept wondering why lifestyle change regarding exercise & eating never worked for me! I took al efforts but none worked due to the high level of stress. Also, like you said your diet may not work for me but the procedure that youve adapted i can definitively use that & include or exclude foods that cause & don't cause inflammation to me. So, thanks a lot for this informative video! God bless you❤

    Hi Michele, I have celiac and Hashimoto’s too. I’ve done AIP a couple times as well and now I’m on basically a modified AIP diet with reintroductions. (I’m also a mom in CO so there’s a lot I can relate to here!) I’m going to start paying attention to my stress levels and my reactions to foods. I have noticed I can get by with indulging a little bit here and there with certain things but it’s like once and done for about a month before I can try that again. You’ve inspired me to look into qi gong and meditation. I get awful exercise-induced fatigue but I’ve recently discovered that dance is the exception because I enjoy it so much (and I’m using my mind to remember the moves so it’s a distraction from the uncomfortable physical sensations) and backpacking/hiking . The latter I think works so well because I feel so content when I’m out in nature. I watched your family backpacking video to prepare for a recent trip to Lory State Park (which I highly recommend!). Thank you for all your service to our community. I hope we get to meet some day (maybe in the future you can do an in-person workshop/qi gong class?) 😊

    Have you considered resistance training? I learned about this by learning from physical therapists. One of the most common injuries they see is from yoga. And I would suggest instead of meditating, opening yourself up to the occult spiritual forces, Please consider a Christian prayer life. Just sitting with Jesus and opening yourself up to him instead of principalities and powers of this world that are evil.

    I was diagnosed with Celiac last year. I recently viewed Michele's video explaining Hashimoto symptoms. Rot-roh. I need to get tested for Hasimoto's. I also live in Colorado, southern front range. Could you provide the clinic/doctor you went to? I literally went to 10 doctors before I was correctly diagnosed with Celiac, and I don't want to repeat that experience with Hashimoto's disease. It's actually a little comforting to know that the depression, fatique, and anxiety might have a cause. -Dan

    Yay for CO moms! haha. And dance is an amazing activity! The only reason I don't typically recommend it is because I can't dance to save my life, lol. I try to only recommend things I embody, and sheesh, I look like Elaine from Seinfield when I dance so... yeah. 😂 But I've read many articles saying how great it can be for so many aspects - coordination, muscle toning, cardiovascular, mental, etc. And thanks for the tip on Lory State Park! Are you up in the Ft. Collins area then?

    Hello , I just came across your channel today and I’m so glad I did. I’m 56 year old woman who has been taking Tirosint 50 mcg for over 15 years ( hypothyroidism medication ) and honestly I am so tired of living with these issues like fatigue, neck and back pain, anxiety/ panic , poor nutrition….     Thank you for taking time and effort to share experience.❤ Your videos help me staying sane and not feeling alone..your positive spirit is always uplifting. I did elimination diet, reading dr Wentz books but still struggle. Currently my biggest conern is my chronic insomnia. More than 4 days per week without sleep. I was flight attendant in Mddle East flying crazy routes for almost 4 years and have never slept before night shift ending up staying awake for more than 48h. I guess my job aggravated my Hashimoto and amount sleepless nights pushed my body to the limit. I allowed myself to recover from this crazy lifestyle quitting job but its been 9months and my insomnia, anxiety, and panic attack got worse. I am on Zopiclone now😢 as the crying night trying to fall asleep made me feel like i need medical assistance. Not sure what came first depression or insomnia. I can't handle the stress ay all although I am not working. I am physically active, lifting weight, goinh for Yoga whenever i can but no avail. I push myslef to not to stay home. My ATP, ATPO are sort of frenzy. (around 1700) Anybody suffer chronic insomnia and anxiety? Is there any group support within the community? I would love to try diffrent meditation techniques. Sleep hygiene does not help. I am 31 but sometimes feels like no silver lining. The pills are a bit of a help but am afraid to develop dependancy. Sorry for such a disclosure.. Felt like I had to share it.. 😢

    So sorry you're going through all of this! I will say that chronic insomnia and anxiety are definitely issues with Hashi's - I've had both but luckily have been able to get those both sorted. However, you may have added layers with the flight attendant night shift stuff. I recommend checking out what Michelle Tam of NomNom Paleo has to say about it - this is an old article about when she used to work the night shift, but it may unlock something for you (and she links to some other resources): nomnompaleo.com/post/55156756199/surviving-the-night-shift I totally agree with the Oura ring recommendation she makes, and also if you don't already, exposing yourself to as bright a light as you can when you first wake up may help regulate your circadian rhythm. Like I go outside and walk my dogs first thing without sunglasses. And then at night I make sure I'm not using any blue lights/screens without blue-light blocking amber glasses. There is a LOT you can do, but I'd start with that - circadian rhythms can really get knocked out of whack and cause all sorts of issues, but the more you can regulate it (and get up and go to sleep around the same time each night) it may help...

    I struggle with chronic insomnia, as well. It contributes to sugar cravings, which of course leads to a blood sugar roller coaster. I've had trouble with it since I was a young child which I believe is related to my ADHD, but rotating shift work while in the USAF definitely made it worse. I'm trying to mentally get myself back to eating clean.

    @@MicheleSpringI occasionally take melatonin and it helps me plus great for your skin, most people today are deficient in magnesium and Vit B1 that also helps sleep, Plus tryptophan in milk if u can tolerate dairy is good for sleep, Castor oil with lavender on the soles of your feet is also amazing, I always take it with me when I am travelling 💕😊

    Great video I think you could try Lactaid to be able to digest dairy and I think the reason you are less able to tolerate corn in the US is because it’s extremely genetically modified. There’s a documentary about it called king corn which you might like.

    Great video. I made changes to diet by cutting out gluten, dairy and consuming prebiotic and probiotics. After what interval after these changes should I recheck my thyroid tpo blood test?

    I usually just get it through a wide variety of veggies - things like kale and spinach are high in it. I really don't worry too much about any of the micronutrients as long as I eat a nutrient-dense diet. But I do take magnesium as it's hard to get enough of that in food anymore.

    I used Levels to get a continuous glucose monitor for a year (I made a video about my experience here: kzread.info/dash/bejne/ioF_1taOf9PVYM4.html ). Now I just use the Dario finger pricker thing if I'm ever curious, but I don't track it all that often because I know after that year, what symptoms correspond with high vs low blood sugar, etc.

    Look up the studies on watercrest and how it can help you recover from exercise. Pretty awesome stuff! You may be able to tolerate more foods if you incorporate watercress.

    Thank you for sharing comprehensive insights. I have started aip diet and it seems to be working. Although it sounds like it's a long journey. Did you or are you still using medication while you are working on your diet? I am using an ointment for psoriasis and it gets worse again if I stop using it. I would like to know a little more about how you did with meds/diet. Learning a lot from you. Thank you.

    I do still take thyroid medication every day because enough of my thyroid was destroyed in the years that I didn't know that I had an autoimmune disease raging in the background (doc just told me medication was all I could do). But I've been on a stable dose ever since I changed my diet. I will say that with skin conditions like psoriasis, they tend to be one of the last things to get better. The body concentrates first on repairing any inflammation inside, healing leaky gut, making sure there aren't rogue immune functions (like autoantibodies going on), and replenishing nutrients, etc. THEN it addresses skin, hair, and nails - those are always lowest in priority. Yet, once you get to a point where those other things like the inflammation are fixed, then I think you'll notice you may be able to go off your ointment. However - if you still have to use the ointment, please do NOT view it as a failure. It's just another tool you can use. That all being said... I've had many psoriasis clients have their skin completely clear up after about 6 weeks or so on AIP (and have gone on to successfully reintroduce foods as well).

    I also wore a cgm for some months and while in the past I could tolerate sweet potatoes, even a small potion was wildly out of range. But other paleo starches in moderation are ok. I really wish I could get beans and peppers back but because I’m pretty reactive to most of them. I’m very lucky I can tolerate a bit of potato starch (like you I usually permit it on vaca) and if I have some cooked tomato once with big spaces between I don’t really have a problem. I do tend to get some stiff joints after vaca so I know the impacts are still there for me but it’s not catastrophic. Btw I’m also hashis and celiac. Corn, dairy and eggs are no problem for me but I just limit them over all because I feel like as a part of my diet they impact me.

    Im currently on the AIP diet . I’ve been told no fruit or veggies with lectins (no night shade veggies, tomatoes, corn, dairy, sugar, etc.) Geesh, this is confusing.

    I have Hashimotos. I stay away from all grains. I wore a CGM for 3 months And all grains mess up my blood sugar and symptoms. I seem to be good with cheese and cream. I think tomatoes maybe a problem so I am going to eliminate them for a while.

    My "one food" is popcorn, and I'm talking about raw kernals in a stove top not that fakey fake microwave processed stuff. Every time I eat it... I am instantly 6 months pregnant and farty. 🤔And yet... I still do. Sigh. Thanks for sharing all of this, Michele!

    Have you heard of the glucose goddess and her recommendations on eating certain foods foods at certain times plus the addition of vinegar and eating certain carbohydrates cold or refrigerating them that changes their glycemic index.

    Yes! I actually tried eating proteins/fats before carbs when I wore the continuous glucose monitor and it didn't do anything for me personally, but I know it helps my son (who is Type 1 Diabetic). I think for me I either eat too fast, lol, or it was just the sheer amount of carbs that my body couldn't handle? Not sure, but like everything, it's highly individual.

    There is so much conflicting information out there. I don't want to manage my disease, I want to get rid of it. My sis in law HAD Hashimotos and said she can't have the tomatoes and night shades, gluten, dairy and was told to eliminate eggs, but she hasn't and she is healed after several years. One of the doctors on here said no dairy, gluten, nuts, legumes, eggs. I don't want to have to take meds, it's not a thyroid malfunction, it's a autoimmune issue causing the thyroid to be inflamed. She read the Hashimotos Diet, I guess I'll try that route.

    Thank you for sharing. I am a female in my late 30's and have had hypothyroidism thyroiditis since my teens. Every Dr I see says I don't need medication and there are NO lifestyle or diet changes I can make to improve my condition. My antibodies are now in the 600 range. I eat pretty clean in general and have been GF for 4 years. I also recently decided to go dairy free to reduce inflammation. Could you share more information on your antibodies levels please? What they were and what they are now? Thank you!

    I honestly can't remember exactly what mine were, but it really doesn't matter much as it's relative to each person. Like I believe mine were only in the low 100's, but that doesn't mean that someone with them in the 1500 range is "sicker" - it just means that's what their own body is producing. What is more important is how your #'s react after you make changes - like if they do up or down. Right now (and for the last 5 years) I've been in the lab "normal" range, but not 0, as I think it's almost impossible to get to 0. Once you start producing antibodies you always will, but you just don't want them running rampant. So you're just really looking for a reduction. I've had clients with their antibodies in the 2000 range that brought them down into lab normal within a few months, so it's also not like the higher you are, the harder it is to bring them down either. It would make it a lot easier if it was the same for all of us, though, lol - but as with everything, we're so individual.

    @@MicheleSpring since changing my meds, my TPO actually went up. My doc said this would happen as we transitioned to the new med and getting the right dose. Overall, I feel much better but my TPO is sitting at 188. Before changing meds, they were sitting at around 129. I hope they go down as I continue this healing journey.

    Hi Michelle, I’m a new watcher. Last October 2022 saw a thyroid specialist under chiropractic care because I just thought all my insomnia had to be due to my thyroid. Sure enough, she did the full panel and my thyroid antibodies showed Hashimotos, and she said it was up to 75 with perixidase. 5.4 with antibody. She said I also didn’t have any progesterone. That sabotages sleep! WOW! I got off Levothyroxine and got on Nature Thyroid. I still get flare ups but its either gluten or stress. SO I’m really off gluten. I need to know if there’s a way around stress to be a trigger. What can I take daily to buffer that? OR do?

    haha, I could literally make a whole video SERIES on this, but really, my absolute favorite tools for stress management are meditation , qi gong, and EFT (tapping). Yet ANY thing that you can do to relieve stress is great. I just love meditation because it's like money in the bank - you meditate for 5 minutes and it calms you then, but also helps train your brain to stop going into that crazy though sprial that can cause more (unnecessary) stress. I don't think I've ever meditated for more than 20 minutes at one time too, so it's not like it has to be anything that takes up a ton of time. I usually only do it for max 10 minutes a day, 3-4 x a week... Qi Gong is one of my new favorites as of last year - I even became an instructor because I love it so much. It's moving meditation, so if you're like me and have a hard time sitting still, it helps get all that nervous energy out while calming your nervous system and even moving your body. I'm working on building up a library of workouts, but in the meantime I recommend checking out my teacher, Holden Qi Gong here on YT. And then EFT tapping (Emotional Freedom Technique) is AWESOME for helping to process through those sticky emotions that cause those thoughts that run over and over in your head that exacerbate stress. It's the single best tool I've ever used to get out of anxiety, fear, shame, etc. I'm working on building a library up of those as well in my Autoimmune Collective membership, but there are some great resources here on YT for that as well. Basically, if I have resistance to something or if it's causing me anxiety/stress I tap on it. And then I try to do Qi Gong 3-4x a week to move my body and work through any residual stress that is hanging out. And then meditation is something I'll either do after qi gong or tapping typically (just because then I'm much calmer) and I can practice observing my thoughts instead of following them around and around on a loop towards STRESS. Hopefully that makes sense, but those are the things I've found most effective...

    My girlfriend has diverticulitis so nuts are nit a good option, still trying to understand if it is hashimoto, a lot weight loss and hardly eating. Red meat seems to be hard to digest.

    Yes, I do find I can go to restaurants, but we usually choose more of the standalone-type restaurants as they're usually more apt to be able to handle things like gluten-free meals. We'll also do things like Chipotle (not sure if you have those) as well - like places that are already conscious of gluten and can handle it. We avoid mass chain restaurants that have no clue though. As for what we order - we'll go for the things that are more gluten-free to begin with - tacos, bowls, steak, etc vs fried things. Though we luckily have a few restaurants around here (the Boulder, Colorado) area that have fried chicken and fish and chips that are made in completely gluten-free friers. So I do think it also depends on your area - it's so common though now for food intolerances that if you do some searching you may find some places near you that can accomodate you.

    I also live in Canada (Ottawa). Depending on where you live, they usually have restaurants in all the big cities that have gluten-free options. Big chain restaurants like McDonald's, Tim Hortons, etc., are your worst enemy. There's a restaurant here called "Allo Mon Coco" that I eat at often.

    AIP did not help me.. I cannot eat eggs, I have severe egg sensitivity. My situation, I believe, is very severe. I only do well eating meat, and I don’t call it “carnivore diet” because I did this before the carnivore diet became popular.. I legitimately cannot eat anything other than meat.

    Starchy carbs to under 1 cup "each meal" ..thats quite a lot really..which is good . I have all sorts of chronic symptoms and I am completely bamboozled as to what I can frikken eat ."Everything" I eat seems to cause some kind of reaction or increase in symptoms. I try to eat healthy but my stomach just can't handle it. Too much fibre. I have to eat soft foods. I can't figure out which foods are causing the muscle pain. I do not know what to do. I have cut way down on sugar, refined carbs, processed foods, no alcohol at all. no smoking but I still have symptoms +++ I meditate ev day, I have not been diagnosed with Hashis but have had, for years, borderline low T4 and very high thyroid AB's plus 20 years of muscle pain every day. fatigue every day,. depression and uncontrollable anxiety. It is a living nightmare.😔😔

    @jacquiQ, I have Hashis and i found that if I cut out all sugar and all grains, i wake up with no pain. Maybe starting with the carnivore diet and then adding things in is a way to go? At the moment, I am trying to cut out dairy, which, for a butter lover is not an easy thing...:-(

    @@americarocks3175 How are you doing now ? Has butter gone ? I am down to butter as my only dairy, working on getting rid of that. Cannot stop rice and white potatoes . I go two days with no rice or potatoes and I get awful insomnia which I have had years from awful meds I was on, so now I am terrified of insomnia. I think I now had HI. Histamine Intolerance :( I cut carbs way low for months and I literally had insomnia for months on end til I reintroduced some glucose and white carbs. I see Michele had a reel where she talks abt her insomnia so I wonder if she gets it also from low carbs ? I have to sleep, its an absolute priority for me.

    I have migraines triggered by Tyramines....ugh.... On elimination diet. It's brutal. So far Bushes Organic baked beans and avocados are out..... When you're trying to be healthy and food makes your head feel like it's splitting in half.... MY LIFE

    Yeah, it's pretty common for those with thyroid issues to have and stomach acid. Which LOW stomach acid actually causes the symptoms of HIGH stomach acid. It's contradictory, but I can tell you that so many of my clients plus myself have suffered from this and gotten help by taking stomach acid support to produce more and then our acid reflux symptoms went away.     There must be cause I have hypothyroidism and got diagnosed with Gerd try to stay off the prescription medication for it. Take probiotics 😊

    Eh, I *think* there are some non-Paleo ingredients (can't remember off-hand), but I personally do fine with them so I'm kind of obsessed with it. But I also don't eat Paleo for the sake of eating Paleo - like I could really care less if it's labeled that or not, it's just a template that I use since it is the closest thing to what I can tolerate. But if you're trying to eat strict Paleo to determine if you have any issues with something, then it's probably not "Paleo".

    I have Hashimoto's and cannot tolerate eggs, but some people are OK with them. I personally follow a fairly strict meat heavy diet, only goat dairy [mainly the butter] no fruit, no veg , some nuts , 85% dark chocolate small portion occasionally. I only drink water and one cup of black coffee in the morning with MCT oil. No i do not get constipated - the usual question 😂. I also take 50mg of Levothyroxine and the miracle drug no one on here has mentioned- Low Dose Naltroxene. 4ml every evening. Absolutely marvellous for autoimmune diseases for many people. Check out the LDN research trust.

    @@debbieredfern2267 I can't tolerate egg whites , but eat egg yolks from time to time...literally maybe once twice a month. I am curious which nuts you are able to tolerate. Also, what is your daily eating like? Sounds like a carnivore-ish diet, which many had great success with. Please elaborate? Thank you and good health to you and whomever reads this!

    I’m living on meat, butter, avocado, eggs and spinach and lots of herbal teas for the last 12 months, I’ve no funding to get professional help and have self diagnosed myself in a way through thousands of videos and webinars and believe I have a sensitivity to gluten, dairy. Nuts, eggs , pesticides etc and so much more. I’m now to scared to eat and I get so bloated from eating eggs but there’s not much else I can eat and to scared to keep trying anything else. And now it’s just raised my stress levels way higher than they’ve ever been. I’ve been losing weight so fast. To fast. Doctors don’t listen and unless you have money you can’t get help. And the constant fatigue makes it so hard to focus . So it makes it even harder to read through I information or even trying to work out a plan of action. Honestly I’d be happy if I never had to eat again . Atleast then I wouldn’t live with this fear and this stress

    @@Imperfectly_Perfect76 take good probiotics vit D3 try broccoli sprouts or broccoli. garnish with oregano, holy basil, catnip. Foods and supplements to help the gut and thyroid. Another thing that can help is fasting and juicing to reset the gut. I was in your shoes.

    Can i just say thst dates are brilliant, they don't trigger my fibromyalgia and I read they don't spike blood like other sugar / Carbs, they are mentioned in the Quran, they truly are blessed and consumed by the prophets peace be upon them, I eat them as my staple food. ❤

    It depends on if you're on any sort of elimination diet (like AIP) right now or not. Bare Bones is one that you can sometimes find in the freezer case at stores, and that's AIP friendly. Otherwise there are quite a few Paleo-friendly ones, like Kettle & Fire (in cartons in the dry goods area) and sometimes even store brands are ok if you check the ingredients. And then if you're not on ANY of those diets, then I'd go for one of the organic store brands as long as they don't have gluten (which WHY broth would have gluten in it doesn't make sense to me, but we've gotten quite a few cartons over the years that do....🤷‍♀️

I just started the AIP so I’m not eating any of the stuff on the do not eat list and last night I made homemade bone broth for the first time cuz I wasn’t sure which brand was ok … I have hypothyroidism so I’m trying to change my life to hopefully start avoiding those flare ups that always seem to knock me down on my butt lol I appreciate your channel, my husband and I have been watching many of your videos. Also , I love your banana milk recipe cuz I don’t want to over consume coconut milk cuz I read that for some people it could cause anxiety and God knows I already have that so that’s why I’m afraid of drinking or eating too much coconut although I’m not even sure if that claim is even true 🤷‍♀️ and one more thing. I noticed the ok to eat list says tuna fish is ok so does that mean I can eat canned tuna in either water or olive oil ? Thanks again ! You’re a true blessing and thank your lucky stars that you don’t live here in Palm Coast Florida or I would be at your door everyday asking you questions lol
