This is by far my favourite chocolate chip cookie recipe, and trust me, I've made MANY a chocolate chip cookies in my life. It's a relatively simple recipe, but with a couple of tricks for extra yumminess. Make these and bring to your Christmas dinner, or whatever you're doing for this holiday season, and I promise you people will be in love!
Tip: These are best eaten when they're freshly baked-when cookies have cooled enough so the edges are crispy, but the chocolate is still gooey and melty inside...omg yum! Doesn't mean you gotta make them right away, though, you can simply reheat them in the oven and get the same effect!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZread channel Pailin's Kitchen.

I made this and it was the BEST cookie I've ever made. The only recipe that cookie recipe that actually worked with me and tastes absolutely AMAZING. Y'all have to try it!!
Chewing the cookie right now, I must say, they’re great! And that’s a lot coming from a non-lover chocolate chip cookies! I only had whole wheat flour on hand, didn’t have enough chocolate chips so I added a chopped up chocolate bar, and it’s delicious! I only baked 12 cookies now, will bake the rest after aging, curious to taste the difference. Thanks so much for the recipe! I made these, they are INSANELY good- seriously I have been making subpar chocolate chip cookies my whole life until now. Also, I'm in Australia so I used Cadbury Melts as the chocolate discs and didn't have high hopes for it cuz I usually think melts are lower quality chocolate but they tasted REALLY good, if you're also in Aus and can't find chocolate discs the Cadbury Melts worked really well

Looks great! I had to dig to find out if the 'aging process' should be done covered or open to the air in the fridge*. "Age the dough: Cover the dough tightly and refrigerate for 48 hours." Just in case anybody didn't want to go to the written version of the recipe. *Yes, sometimes you do want to do that. To make good crackling on a pork leg, for example.
This is the first cookie recipe that worked for me! Usually my cookies don’t spread and are dense and bready. But not these, they are perfect!!! I’ve tried tasty, ba, buzzfeed recipes and NONE compare to these cookies. If you want an even more flavour and gooey cookie here are some tips: 1. Add an extra egg yolk to the recipe (not a whole egg just egg yolk ) 2 eggs + 1 yolk 2. Split butter in half. Brown one portion cool it down to room temperature and then add the second half of just soft butter. 3. Aging does work! Age it at least over night.

Thanks for the info. I got the same problem with my cookies it's not spreading and it's like bread. Tried the tasty recipe and the other but didn't work well. I'll try this recepi soon hopefully it'll work😊 thanks again👍

Omg...those look great. I need to make these. Also I was skeptical too about aging cookie dough batter but i get why it'd work. It's like with aging meats how you withdraw some of the extra moisture and concentrate the flavor?
I tried like over 4 recipes and they all failed. And I am not a good baker lol. But when I tried this recipe it turned out perfect! It was so chewy, delicious, and melt in your mouth. I actually messed up and added in 3 sticks of butter instead of 285 grams of butter. But it still turned out perfect!

I just made these, they’re amazing, but i would cut the sugar and chocolate chips down to half, then it’s perfect! Thks for a great recipe tho. love it.

Hi Pailin, Long long ago I discovered my right index finger worked really good for cleaning mixes from the hand mixer I use. Then I discovered my tongue worked amazingly well to remove all that sticky doughy substance from my finger. Soon there after I developed a taste for chocolate chip cookie dough! -Bob...

Wow! Thanks for sharing. It is so similar to my own recipe and method. However, I can't easily try it as my kitchen scale broke and I am a lot more used to measuring in volume. I know measuring by weight is far better. In case that you have the measurement in cups, would you mind sharing it? Thanks again.

I’ve tried many recipes: Rick from Bon Appetit, Claire Saffitz, Buzzfeed, but Pai’s is what works for me the most! And the batch is quite big so I get to freeze the dough and bake 2-3 cookies when I want to 😊😊

Hi made these cookies yesterday and i used browned butter while they are delicious they are much thicker then using the original creamed butter method.should i reduce the flour?to create the flatter cookies i prefer in the video?

What chocolate disc brand do you recommend? I bought some recently but it doesn't melt in the oven like yours does.
The. Best. Chocolate. Chip. Cookies. Recipe. Ever!!! I just made the dough and now I just need to wait for 2 days as your suggestion. I baked a scoop right after and it tasted already amazing! I can't wait to taste it after it's aged. :)

That is how I love my chocolate chip cookies. I would love to know how to make a more gooey, chewy, dense, peanut butter cookie. All the recipes I have tried are either cake like or crispy.
I tried this recipe and it’s so good!!! I forgot to add salt to the flour but it was still delish. I just need to use a smaller scoop coz the cookie is so big when I baked it. LOL. Chocolate buttons are really better than chips

You're pregnant! Congratulations! I might try this recipe since I have leftover chocolate disk here although they are a bit curved at the top then flat at the bottom. I just don't know if I'll be able to stop myself from baking them right away..
Within your cookie dough, those chocolate discs are creating chocolate strata; yum. Love you Pai, long time subscriber. Funny thing, Pastry chef Jacques Torres, aged his chocolate chip cookie dough 36 hours back in the day.
