Mushkaki, An East African Grilled Meat!

A great healthy dish that brings a little bit of indian, mediterranean and African taste combining them in one amazing dish!
Ing:
10 to 12 bamboo sticks soaked for about 20 min
2 lbs of rib eye steak cut in about 1 inch pieces
1 to 2 tbsp of fresh ginger and garlic pureed
11/2 tbsp of sour cream
1 tbsp lemon pepper
1 tbsp cajun seasoning
1 tsp chilli powder
1 tbsp paprika
1 tsp meat tenderizer (no msg)
salt to taste
1 tbsp oil
Method:
In a big bowl add the cleaned meat and add the ginger and garlic, sour cream and all the spices. Mix well and skewer them on the bamboo sticks and let it marinate in the fridge for about 3 hours or overnight.. Preheat grill to about 400 degrees, oil the grids and lay them on sideways cover the grill and let them cook for about 5 to 7 minutes, open the grill turn them and cook them for another 5 to 7 min! Serve with salad or grilled vegetables!

Just a thought. Lived all my life in Kenya. Never heard of Cajun spices being used in mishkakis. And no sour cream either. But it’s almost like I make it too. They look good. Thank you

Mshikaki is the smell of home. There always was someone making mshikaki in every neighborhood; pretty much where we used to meet.

If I was in Tanzania perhaps I wouldn’t have used this method but the quality of meat is completely different here in the states as the meat is not as tender, so this is the reason we have to use different methods to tenderizing the meat.
I will try the ribs. I wouldn't expect to put mustard but I will give it a try and let you know. Thanks

Mama Salama I tried your Mushkaki very Delicious I just have one question? In your video you say Yogurt at first then Sour Cream and then in description you wrote Sour Cream? Can you please tell me Yougurt or Sour Cream? Thanks mama

Sorry about the confusion use sour cream if you can if you want to use yogurt then use thick yogurt! I hope this helps.

I had high hopes for this one. But the meat was never soft. I did it in the oven. But I think its beacuse of the meat. It might have not been rib eye steak. InshAllah next time.

I am sorry that the meat did not become tender but here area a couple pointers to use in the marination blend a couple kiwis or raw papaya these are natural tenderizers and it really tenderizes the meat... Give it a try and let us know if that helped, good luck!
