Musakhan - the national dish of Palestine
Musakhan
Recipe:
• 6 small onions
• 1 tsp pepper
• 1 tsp cumin
• 2 tsp salt
• 2 tbsp sumac
• 1 taboon bread
• Chicken spices:
o 7 spice
o Salt
o Pepper
o Lemon pepper
o Paprika
o Chicken spice
o Olive oil
o 1 lemon squeeze
Steps:
• Add spices to chicken and bake for 1 hour in 400
• Chop the onions
• To a pan, add the onions then drizzle a good amount of olive oil
• Once they become translucent add the pepper, cumin, salt and sumac
• Cover the bread with the onions
• Place the bread in the oven for 10 minutes at 350
• Place the cooked chicken on top and then sprinkle pine nuts

Someone below wrote that Musakhan is Turkish in origin that came to Palestine via the Ottoman Empire. I rather doubt that since this dish is virtually unknown anywhere else in the former Empire. Makes no difference .... it is a yummy dish, eloquently described here. Well done!

Hey we don’t know how to cook with olive oil in India.. my silly question is what kind of olive oil for this, extra virgin olive oil or pomace? Is evoo suitable for high heat cooking like this? Thanks

Not my video of course but from what I’ve seen in videos online, in high heat cooking extra virgin olive oil generally doesn’t ruin the food, it’s just that you lose the nice subtle flavors. That’s to say, use what you have.

Nice video, Yaso. As a suggestion for a future video, maybe a way to remix musakhan to make it more easy to eat on the go, would be to make musakhan empanadas. So you'd basically make musakhan how you'd normally do but add in the shredded chicken, onions, sumac, olive oil, and roasted pine nuts all in a taboon bread as a sealed wrap and then either fry it or bake it like an empanada and then serve. I think it'd be a really convenient way to give people a taste of Palestine on the go. What do you think, Yaso?
