Mrs Maclean Makes Elderflower Champagne

Mrs Maclean shows us how to make 12 litres Elderflower Champagne.
What you'll need:
40 elderflower heads
1.5 kg sugar
4 lemons
sieve
muslin
funnel
plastic fizzy pop bottles
maybe champagne yeast
and maybe a sterilising tablet

    Avoid picking from roadside as most probably exposed to exhaust fumes, just lay the flowers out on some paper or tea towel and allow the bugs to escape.

    Given this ago, first time. I notice everyone else puts in vinegar but you don't? Any idea why they use vinegar? Aldo I've got old grolsch swing top bottles, the hold larger which is pretty gassy so I'm going to try them.... Hopefully they don't go pop!

    You could, but you would be best adding sulfite, when you transfer it to glass bottles, to kill-off the yeast and stop it fermenting further so you don't get exploding bottles. Before doing this you may be best chilling the sparkling wine in the plastic bottles for a few weeks to allow the built up carbon dioxide to absorb more into the wine, otherwise it may go a bit flat. You may wish to use méthode classique instead if you have made a dry wine that you wish to make sparkling, then sweetening if desired at the end after disgorging. HTH

    You can do but the first firmentation can be quite aggressive and bubble over the bubbler!

    CaptainTJAYS i do its cleaner and safer just use a bucket alot bigger than your mix

    Wild yeast are too slow, just use champagne yeast and follow temp. recommendation.

    At 1:23 you say you can use the wood for firemaking. I would just like to give a word of warning. Do not use the wood for firemaking if you plan to cook on the fire since everything on the elder tree except for the flowers are poisonous, even the berries if not prepared properly. But especially the wood with the pith that is inside of it.

    Pick from high up and not by the roadside or in the city. Avoid animal piss, road dust and exhaust fumes that settle on your elderflowers 👎 sod drinking that!
