About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZread.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

I don't understand why people are getting touchy about the camera man joking with Hiroyuki about him having OCD. He is friends with Hiroyuki and has the right to joke around with him and whether Hiroyuki took offense or not is between them. I didn't detect any malice in the joke. How you gonna tell two people that probably were friends long before they started this channel, how to joke around with each other. Japanese is absolutely a different culture so I can imagine Hiroyuki would take offense if he feels that the camera man is trying to say something is wrong with him, but nevertheless they are still friends. I say they should joke around a little more, put some humor into the channel. Keep it up you two! I love your videos!

Japanese treats cooking as an art, not just food, everything is organised and laid out with precise procedures and aesthetic appearance is important.

Yeah, I completely agree. There are things that he does that makes me cringe like leaving the the little piece of root on the cutting board. But the joking around about OCD is not one of them. Just thinking about the piece of the root bugs me.
As a sushi chef I think it's kindof ingrained to be neat and orderly. Sushi making is often a very precise art. I love it.
Hiro is not OCD. His culinary experience is built on process, harmony and everything in its place. Quite normal for a Master Chef. Awesome video. Arigato!

I have a friend who says he has CDO.....when asked "what is CDO?" his reply....."it's the same as OCD, but the letters are in alphabetical order" ; ? )

Exactly my dad was a maintenance man for a semi truck manufacturer and his tool room was laid out in a certain manner to best suit his work and his tool room at home was laid out in a certain manner and if I moved a screw driver out of place he knew it within 30sec of walking in the tool room I used to move small things just to mess with him and every time just a few seconds he would see it I wish I could post a picture on here I have a picture of my stand up tool box drawers so my dads “ocd” carried over LOL all the sockets ratchets this that and the other all in there place and nice and neat and I know if my 10mm socket is upside down or gone LOL 😂
As a chef I learned to be ocd at work and it really helps to have everything where it belongs I hate wasting time looking for stuff

Hiro can succeed on youtube alone and not vice versa. The cameraman is quite annoying. It would be awesome if Hiro put all his efforts on his other channel Hiros Day off!

The way he is gently placing the ingredients into the pit reminds me of sukiyaki. My state, Oregon, is on fire right now and I could really go for a comfort food like sukiyaki. It's good for the mind, body, and soul.
As a native Faroese, it makes me really proud to see you guys endorse Bakkafrost in such a way.

i don't even cook like this. somehow i still watch all the videos. Something about these videos where it's not really about how to make them but just satifaction of him making it.
it’s not really OCD , if im gonna be honest . it’s just that Japanese people are very clean . i believe growing up their parents teach them to always be clean whether it’s to keep yourself clean , or your home or while you cook . just like all of us . 🤷♀️🤷♀️ but love the food n’ the cooking tho . 👏

Its culturally ingrained into their societal norms(being organized). I lived there for ten years and everything they do is super organized. Even the manner in which trash is thrown away, sorted and bagged.

If you are not a psychologist, a psychiatrist, or a medical doctor, you cannot say for sure who has OCD. I agreed with some of the comments, Master Chef Hiro pays attention to detail, and respects his foods and ingredients, and takes pride into what he is cooking.

I love salmon head soup also. I make it hot and sour style in my insta pot. With wood ear mushrooms bamboo shoots and tofu of course. So good
That is why i love japanese cuisine because of its creativity of presentation,cleanliness and orderliness which adds up to the palatability of the foods.
I can't wait to try this- I have been enjoying this channel since the "stained glass sushi" episode, I love this channel.

I lived in Japan for 5 years...i called it the land "where all things considered"...ocd is not even close to how meticulous the culture is...esp.the food...what an inspiration...and i have all 95% of the ingredients of this dish in my kitchen right now.
