Mom’s spaghetti sauce

I use 5 cans of Dei Fratelli sauce, 28 ounce
3 are tomatoes in their herb blend
1 can of crushed tomatoes
1 can of sauce
You can use whatever blend you like.
1 large can of tomatoes paste 12 ounces
Empty all cans in large stock container
I rinse cans into each other then pour one 28ounce
Of water into saucepan.
1/4 cup of virgin oil
2 tbsp basil
2 tbsp sugar or to your taste
2 tbsp salt
1 tsp oregano
1 tsp parley
1 tsp pepper, your choice
Mix it all together with emulsion mixer
Mom always said taste it cold,
It will be great hot.
I cook it for 5 hours at low heat, removing any oil that comes
To the top.
I make my meatballs, check out my video, then cook them in the
Sauce.
ENJOY!

Nice simple recipe! Do you cover the pot when cooking for 5 hours? It seems it would make a mess of the stove when bubbling up from the heat.

No. I keep it uncovered. Cooking it for 5 hours, lets me keep the heat low enough that it doesn’t bubble out. Thanks for the question, please let me know if you try it. Has great flavor.

I I never used a slow cooker. The biggest thing is you need to be home, so you can skim off the oil that comes to the top. I wouldn’t leave it for more than 2 hours.

My wife doesn’t like onions, or cooked celery. One Sunday, at the fire house, the veggies were bad, the sauce tasted fine to everyone,So I stopped using them. Sometimes I do put in a beef shank,if the store has some, Maybe I’ll do that from now on. Sounds like a good idea. Thanks. Miss cooking with my Mom and Nonna. I should mention: The meatballs cook in the sauce the whole time,

Not everyone can afford San Marzano tomatoes which cost twice as much. Simple greed, so many average Italian families learned to make great sauce with less expensive brands, as my Italian grandparents did. My grandma liked Progresso in the old days.
