What's better than pie? MINI PIES! And these little Mini Lemon Meringue Pies are a tiny burst of delicious zing that you'll find it hard stop at one...or two...or maybe 4.
Recipe -
Half a batch of my Shortcrust Pasrty
For the Lemon Curd -
5 lg egg yolks
2 whole lg eggs
110g caster sugar
110g fresh lemon juice
zest of 1 lemon
60g cold chopped butter
For the Italian Meringue -
240g caster sugar
75g water
90g egg whites
pick of salt
1/4 tsp vanilla extract

    I made these for a party and they were a hit! I don't have IG so I'm hoping you'll see this post and my appreciation for the recipe! 🥰 I also bought one of those kitchen torches and now I understand Jemma's absolute glee about using it! I love mine as it was fun to watch the meringue get toasted right before my eyes👀and now I am making excuses to use it! LMAO🤣 ❤‍🔥

    Handy tip from me: When I'm making mini pies and tarts in a tin like this, I use the end of my mini rolling pin to gently press the pastry into the tin, so much easier than trying not to put your fingers through the pastry :-) Happy baking everyone!

    I love mini stuff!! They are great for parties, where you want to try different desserts, but you can not splurge on eating a whole slice of each of them, lovely tutorial!!! I love to make mini cookies!!

    I just came back to say I tried this recipe with my own ingredients for the shell and filling but used ur meringue recipe and it turned out amazing after the third try. For others: make sure it’s 118 degrees and your egg whites are ALMOST stiff peaks before pouring the syrup in. Maybe it’s because I used a hand mixer...but after the third try they were amazing! I baked the rest with georia cakes meringue kisses recipe and they’re so nice and crisp on the outside and chewy inside!

    Handy tip from the future 😂 you can buy mini cupcake cases these work perfect to fit inside instead of greaseproof paper when you blind bake them!! ❤❤

    In Chile we make lemon pie with condensed milk mixed with lemon juice and topped with merigue :D It is insanely easy to make and tastes sooooo good!

    Hey Jemma! Just wanna let you know that my mom and I TOTALLY LOVEEEE your lemon curd recipe! We finished one recipe only on toasts 😂😂. And I re-made lots of your recipes (crepe cake, mini donuts, vanilla cupcake, pie crust, lemon curd, meringue kisses, Swiss meringue buttercream, red velvet cookies, etc), but they look ugly so no pictures. BUT, omg the taste is not something from this world!! Thank you for always sharing your great recipes. I have a question though. When I did my Swiss meringue buttercream, or the Swiss meringue (for meringue kisses), they always kinda curdle or foamy AFTER I'm done mixing and put them in a piping bag. Before I moved them, they are so heavenly and smooth. I was never able to make the perfect meringue kisses shape 😢😢. Maybe you or anyone else with more experience can help me? Thanks a bunch!!

    Lower the heat on the Bain Marie. Keep moving the curd. And do not forget to use the little utensil with little holes to remove all the lumps (english is not my first language and I forgot the name of "colador" sorry)

    I've just made lemon tarts from a different recipe but I want to make italian meringue as per Jemma's recipe. Does the 118c temperature sugar syrup added to the whites completely kill any salmonella, like it does when heating egg whites to 71c in a swiss meringue?

    Tip. You get more juice out your lemons by microwaving them for 15secs, rolling them on a counter and cutting them from stem to stem.

    Is this recipe easily adapted for a full size pie? I just made my first lemon meringue pie earlier today and it's leaving a bit to be desired.

    Katraca Leigh yes. Just put the pastry in a big pan and then cook it with a weight for about 20/30 minutes or till the sides are golden. And the rest it's the same but for a big pir

    Amazing! I was just wondering, if you don’t bake the meringues they don’t become crunchy on the outside and “mallowy” inside (love how you describe it Jemma lol :) so it’ll be quite soft and squishy? Or does the blow torch take care of that

    orlybabe it's a different type of meringue. You are thinking in a pavloba type this is Italian meringue.

    Let your egg whites whip a little bit longer before adding your sugar. It should be to stiff peaks. Also add a quarter teaspoon cream of tartar and a pinch of salt to you egg whites to stabilize it more

    Hey Jemma! I don't have a suger thermometer, could I just use "swiss meringue" instead? So whipping the egg whites with sugar over a bain-marie until dissolved and then whipping more until cool? :)

    You don't need a thermometer. When the bubbles are big and thick. Put some of the syrup on a glass with water and after a few seconds remove it. If you can make a little ball with the syrup it's at the right temperature if the syrups melts you need a few minutes more. And when to start beating the egg whites? When the sugar start bubbling count a minute and the start whipping

    A Swiss meringue would be totally fine here, its what I use every time I make lemon meringue pie anyway

    Thanks! :) I always just "normal" meringue and since I don't have a blowtorch, I have to quickly bake it anyway. But I figured the italian or swiss meringue would be a much nicer texture! :)

    Omg I can only imagine the amazing smell yes weird but I can only imagine. Jemma I love all the mini recepies you make but the only one I had problem with was the mini doughnuts I was not about to find the tray you use. Any recommendations where can I get one😭😭😭????
