Mike Colameco's Real Food ALICE WATERS/CHEZ PANISSE

Тәжірибелік нұсқаулар және стиль

In 2001 we shot this episode with Chef Alice Waters, one of the original West Coast organic pioneers, at her place, Chez Panisse in Berkeley, California. We'll get her story, shop a little at the farmer's market at San Fran's Embarcadero and then head back to Mike's kitchen for a riff on what we saw there, essentially early farm to table cuisine while Mike rocks a man bun.

Love it when you upload these older shows of "Colameco's Food Show". Brings me back to my childhood when I used to catch your shows on lazy Saturdays living in Brooklyn.

Oh my god... 23:40 might be the greatest moment in any cooking show ever. Just the pause and then the utterly sincere "It's good". Man, you seriously make the best shows IMHO. Hope all is well in NY

The amount of Top Chef Talents that worked and came out of that restaurant is almost legendary.

Wow... I've been watching Mike's shows on Create TV. .. These days - he has a full head of grey hair. I didn't really know who Mike was.... But, seeing him paired up with Alice Waters... who almost walks on organic water... Wow.

I worked for Alice back in the 1980's. She's a genius when it comes to spinning public opinion. The food there was mediocre at best, but she managed to convince the media it was a revolution. Bravo for salesmanship. BOO for actual cuisine.

For expediency, invest $5.00 at Walmart one stainless steel pastry scraper to collect chopped vegetables instead of a chef's knife.

I disagree, it will always faster and easier to use a single tool, and not swap between them, than to use two. A really big knife can do both at once!

It’s a lot cheaper. The government does not operate efficiently enough to pay more for proper food. It will take the deletion of a couple of Bureaus/Departments to fix the government’s spending on useless items.

According to some Americans, ensuring that people get proper nutrition is socialist tyranny.
