1. Tamal from Tamales Mina, 20 de Noviembre 209, Centro, 68000 Oaxaca de Juárez, Oax. Open in the evenings from around 6:30pm onwards.
2. Tlayuda con tasajo and hot chocolate at Las Tlayudas de Mina y Bustamante, Bustamante 322, OAX_RE_BENITO JUAREZ, Centro, 68000 Ejido del Centro, Oax. Open from around 7:30pm onwards.
3. Memelita, tetela, de ese and tascalata (drink) at Itanoni, Av Belisario Domínguez 513, Reforma, 68050 Oaxaca de Juárez, Oax. Open Monday to Saturday 7:00am to 4:00pm and Sunday 7:00am to 2:00pm.
4. Mole negro and agua de fresca at Fonda Rosita, La Merced Market, Av. José María Morelos 1522A, RUTA INDEPENDENCIA, Centro, 68000 Ejido del Centro, Oax. Open 8:00am to 6:00pm.

    Between East Asian and Oaxacan cuisine, definitely is a hard decision to make because both cuisines are complex and with depth in flavours. However, Oaxacan cuisine is in my top 3 at the global scale. I absolutely adore this episode. Very well done and the way you describe textures and flavors, you guys are amazing.     Unless I’m Mistaken: 90% of “Mexican” food in the USA including Mexican hot spots like LA, is nothing close to this in any respect. All we get is pork grease / low grade cheese culminating in really basic stuff like tacos, enchiladas and taquitos. The truly worthwhile Mexican food? We don’t see it. I believe that this’ due to the poverty of Mexican immigrants and the more successful affluent areas of the nation not migrating to the USA.

    Love Tamales Oaxaqueños! The banana leaf adds such a nice flavor and keeps it so moist. Hearing how they set up in the morning and night made us think of the tamale carts by us that keep a similar schedule

    Holey Mole.....y. What a feast for the eyes. The gorgeous hand stitched Napkin wrap the Tortilla are in at Fonda Rosita was just stunning. It reminds me of my grandmother wrapping scones in a t- towel after baking!! My Daughter: Where would you like to go for your Birthday dinner tonight. Me: Oaxaca Daughter: Actually l was thinking somewhere a tad less than 13,619km away. Oh well l tried😅😅😅

    That tlayuda sounded so good! Everything being cooked over charcoal had to give it such a rich, smoky flavor *drool* Mole is as personal as a thumbprint....I've only made it from scratch once, and it was SO much work. It really did take 2 days, and it was delicious. Reminiscent of others I've had, but being a fan of cumin, I was heavy-handed with it. If I ever get ambitious enough to spend 2 days making mole again, I'll definitely use the same amount of cumin.

    Aww thanks so much for your lovely message Bee Oh El 😄 so glad you are enjoying this series. Just finding the best, honest, genuine food is so much more our thing than fine dining. We do love a bit of the fancy stuff once in a while but the rustic stuff is what really gets us excited 😄 and it means that it’s accessible for people who want to eat at the same places too 💕 I can only speak a little bit of conversational Cantonese otherwise it’s just English for us. But we always try to learn a bit of the local language wherever we travel to- enough to have a basic conversation- we feel it’s the least we can do. Big love to you in Ireland!     I love your videos, I have been watching all of the Oaxaca food videos. I just wanted to clear up that the beans are not refried beans it’s a bean paste made with avocado leave and normally with some Chile de Arbol blended into it. I am form Oaxaca and don’t get to do often enough. I will be there this year and I can’t wait to eat all this delicious food.

    Chasing a Plate - Thomas & Sheena: It was worth staying up for. Ive only ever seen the dark chocolate looking Mole (think the dark one has about 40 ingredients). In a previous vid you had something with a red Mole and l was keen to see the different types and why they vary. Awesome job explaining the Mole, ingredients used and the Indigenous history. You and us are so lucky taking us into the kitchen and see the bubbling pots!! The locals have definitely taken a shining to you both. Thank you for all the efforts to make this video.👍

Not just tourists mind you but award winning influential U.S. chefs; a couple of my favorites in fact. 👍 *_mole_* "seven different *_versions_* of mole, however there are probably 100s if not 1000s of *_versions_* because everyone has their own *_version_* of a *_version_* so you end up having so many different *_versions_* and the reason you have so many different *_versions_* is because..." 😂👍 Loved that. Sometimes you just get on a roll. I do it all the time. *_coloradito enchiladas_* I'm happy to say I've had that one time and it looked exactly like yours. However I'm sad to say it cost $16.50 USD. Haha. It did come with a scoop of rice so I've got that going for me. 😐 *_Awesome video!_* Everything looked absolutely delicious!

    Los Angeles has 200,000 Mexicans who identify as Oaxacan. Chicago has a considerable population as well. You'd be surprised by how many Mexican restaurants specialize in Oaxacan cuisine. Most are Tex-Mex/border style of course but I'd say of all the actual Mexico food regions, Oaxaca is easily the most common. You'll also see restos promote Baja, Yucatan and Veracruz cuisine. But Oaxacans seem to be quite strict in keeping with tradition so lots of moles, tlayuda, chapulines and mezcal (woohoo!).

    That hot drink is called chocolate-atole is cacao foam with sugar that is added to. White atole. And taste really different than chocolate de agua o champurrado.

    Hi yzaya LiriaN, thanks so much for that information. I knew that the liquid was atole but I thought perhaps it was just a way to thicken it not that it was a completely different drink.     @@ChasingaPlate and the cacao seed have some kind of procedure (fermented i Guess ) that turn it really foamy and gives a little earthy after taste.

    You're right amig@ is much better. I think she even laughed when you called her senorita. 💜 For someone that looks 16 y/o - 30 y/o , one uses señorita, but hardly anyone uses it in Mexico.

    I would like to tell you something, those kind of tamales are really common in Veracruz state, even in Veracruz the process it’s way better because the dough it’s cooked before making the tamales and you may not know Veracruz state have a lot o banana plants which make those tamales more common there, even those states share borders a lot of dishes are similar and it’s hart to know their origin, thanks for travel in Mexico buy you ahoy go to a Chiapas or Veracruz where it’s consider a capital of the coffee, thanks and keep enjoying Mexico.

    Chasing a Plate - Thomas & Sheena thank you for showing all the beauty of Mexico, I would like to tell what can you have in Veracruz state, you may not not but Veracruz state it’s located on the golf of Mexico, yes there’s a lot of sea food, but if you travel to the center of the state like the small town like Xico, Coatepec, Naolinco, Orizaba and Xalapa you’ll find the best food and coffee, you should give it a try, thanks.

    Oh no Thomas, you called the tamale lady "little old lady" instead of just "lady". Don't think that her age should be highlighted - she is just a talented lady/woman who makes awesome food. Otherwise, wonderful and educational video featuring delicious food. You know I love you guys but the adjective "old" referring to a person just threw me off. I also wanted to mention how amazing it is that you always address everyone in Spanish first, therefore breaking the ice and showing respect for the culture. That is admirable.

    Hi. Thanks for watching. No disrespect was meant by that. I mentioned it because it gave context to the stand and the situation. Because of her age she’s now no longer able to sell her tamales on the street. She still makes them but her family have taken over the evening selling to help her out. I think it’s a really neat story and was worth highlighting. We always make sure to learn some words in the places we visit to at least have a very, very basic conversation. It’s the least we can do we think. Thanks again for watching. Thomas
