That looks like a lot of fun...but I've seen this guide let tourists try shrimp paste like that before and I'm like OMG!! Vietnamese people would never eat it straight up like that. It's usually mixed into the soup before eating which dilutes it or mixed in with other ingredients to make a dip. And your boyfriend ate a big chunk...egads!
Great Video.. Seemed so very busy on the River.. how did you know what each boat was selling? and the food tour.. did you pay for everything you sampled or was that part of the tour? Also how much cash did you carry at any given time and want denominations would you suggest
