How many rice recipes? And in how many of those do you have to slave over the stove with way too many ingredients? This recipe is so quick, it takes less than 2mins of prep. This dump and forget recipe is so delicious, it will be your go to. Though we call it The Mediterranean Yellow Rice, it pairs well with Chinese, Indian and as the name suggest, Mediterranean side dishes too. You can make it your own by adding the veggies you love. Its delicious. It's simple and its quick. What more could you ask for?
Substitutions
Butter- Neutral oil of your choice
Basmati Rice- Jasmine Rice or Long grain rice of choice
Stock- Chicken or Vegetable stock or Stock cubes
Green chillies- Thai hot chillies, Jalapeno or Serrano chillies

    I am latina BUT I love cooking different dishes from other cultures. I wanted to try making chicken shish kabobs and thought the yellow rice I typically make with saffron would not go. I made the chicken kabab with your rice and a Shepard salad it was Delicious! I will keep this recipe on rotation at home! Family loved it!!!!! Thank you!

    The standard rice to water ratio is 1:2. i.e. 2 cups of rice to 4 cups of water. I usually rinse the basmati 3 times. That's what my mother taught my sisters, so its the law. I also soak the rice for 20 to 45 minutes. With this, I use a little less water, the ratio of 1: 1½. You can adjust the ratio to 1:1¼, according to your taste. The rice might be slightly al dente. In cooking the rice, I have the pot in a rolling boil for 2 minutes, and then simmer for 10 minutes, its done, not any longer or the bottom rice will be burnt. The rice will be cooked and of separate grains. I am near the sea, so that method is for sea level, if you are in the mountains you may have to vary a bit. Water boils and evaporate faster in higher altitude.

    We wash the rice 3 times ad well. We never cook unwashed rice. But instead of the cup method, I pour boiling water in and use my spoon to measure the right quantity of water. It works for me. But this was truly helpful. I'm sure many of our subscribers will find this helpful. Thank you! ❤

    I made yellow long grain basmati rice perfectly cooked and in very easy way. Less oil and and less salt. I used saffron to make my rice yellow and I was surprised the taste like heaven lol

    The stock provides most of the flavour. You can put any flavour stock you like. You can use just water but it wont be as tasty as it would be if it was made with stock.

    Not spicy. The spiciness of the chillies reduce a lot when you fry it. The chillies give it a special flavor.

    We normally use 1:2 (rice to liquid) for most basmati rice. Please do check the cooking instruction of your rice brand. It's mostly mentioned.

    Not all Mediterranean countries use the same recipes, when someone states "Mediterranean cuisine" it means they share a lot of core ingredients but not necessarily recipes. There is no traditionally Mediterranean recipes, the traditional part equates to the recipe owner of a specific country not the group itself.

    Chicken stock is the broth made by boiling chicken (mostly bones) with some vegetables and spices for flavor. The stock has a high level of collagen and it used for soups, curries etc. You can buy it at most grocery stores or even use bouillon.
