Medieval Quince Creme ("The Great British Quince Off")

Quinces in Medieval England were often cooked into a kind of preserve or confection. Here, though, I make a dish called Connate, a rather unusual, creamier affair, made with a surprising ingredient.
Watch me experimenting with the recipe for Connate in Richard II's cookery book, Fourme of Cury, before testing it out on my friends at the table who have brought along some modern quince confections, too. And what inevitably follows is the Great British Quince Off!

    I hope you do. I really like it. Just made Connate II today. A little more set, more colouful, and quincier in flavour. Just going to eat some now.
