"Meat Lovers" Vegan Roast Tofu & Veg - Meal Prep

Join Chef Derek Sarno for this quick and easy vegan "whole roasted" tofu recipe with spinach, mushrooms and peppers! High protein meal prep with minimum fuss and maximum flavour!

“Meat Lovers” Roast Tofu & Veg [Meal Prep]
Serves - 4
Preparation time - less than 30 minutes
Ingredients:
1 block of tofu (extra firm), sliced in half
4 cups prepared brown rice
1 cup BBQ Sauce
3 tri-colored bell peppers, cleaned, seeds removed, large diced
½ large onion, cleaned, large diced
300g chestnut mushrooms, sliced in half
200g spinach (1 package)
Handful of fresh coriander, or parsley
3 tbsp ‘pork’ seasoning blend (sage & onion)
Black pepper
Salt, kosher or sea salt flakes
½ tsp granulated garlic
Sunflower oil
Directions:
Preheat oven 200c (fan) / 375f convection or 400f bake
Place half cut tofu into a large bowl and massage tofu with 1 tsp of oil to coat each piece.
Add ‘pork’ type seasoning, salt-n-pepper, granulated garlic and gently toss to cover tofu with seasoning all over.
Heat cast-iron pan on medium heat until wicked hot. Add about 2 - 3 tbsp of oil.
Add tofu and sear on each side 2-3 minutes until golden crispy brown all over.
Remove from skillet and place on parchment paper lined baking sheet pan.
In the same hot pan, add mushroom halves face down, drizzle oil and swirl to coat.
Sear for 2 minutes to brown, before stirring. Press with 2nd pan (optional). Remove from skillet. Arrange on baking sheet with tofu.
Place cubed bell peppers and onion into large bowl, add little oil, pinch of granulated garlic, salt and pepper and lightly toss to cover evenly.
Add to hot skillet. Sear peppers and onions for 2 minutes, stirring occasionally. Pressing the peppers and onion is optional to add more even browning. Remove from pan and arrange on baking sheet with tofu.
Place baking sheet with everything in the oven and roast for 10-15 minutes.
Remove from oven when done, allow to cool for few minutes before slicing tofu.
In the hot skillet, add baby spinach and stir until wilted, roughly 1 minute. Remove from heat.
In a separate pot or container, warm the BBQ sauce, or your favorite sauce.
Plate 1-2 meals for now and pre-pack meal prep for later.
Remember to reuse plastic takeaway boxes, or glass containers when available.
Every little helps to reduce and reuse plastics is important!

    Kacey Balseca that is exactly the path that I took. Last thing to go was dairy and eggs. Best thing I’ve ever done. When you make the final switch, you will feel soooooooo freed. That said, I do believe that perfection should not be the enemy of good. All or something is better than all or nothing. That said, fully vegan is truly the best for me. ❤️🌱❤️ bless you.

    I found Derek Sarno's meals from Tesco very delicious. I turned the box to read the ingredients, saw his name and was happy to find his receipts and youtube channel. I am vegetarian for more than 30 years but would like to become vegan and these receipts are very helpful.

    I made this last night (with some modifications based on what I had on hand). I’ve never been a fan of mushrooms and usually chop them small to “hide” them. My husband and I fought over who got the most mushrooms 💕 I froze, thawed, and pressed my extra firm tofu based on recs from CheapLazyVegan. It def improved the texture of the tofu in a recipe like this. Thank you for all the fantastic recipes y’all have done!

    Made this for dinner tonight and it was a hit! My family and I have never before made a tofu dish we enjoyed. This was a feast for the eyes and our palates. This is the second of your recipes I've made. The first was the BBQ pulled mushrooms - so delicious we had beat back the carnivores. Thanks so much for sharing!!

    I made a version of this tonight. Used Montreal Steak Spice.. think I’ll use a finer grain seasoning next time, or grind this one down more... but wow, super simple, and more healthy than most takeout. Hella cheaper too! And now I have 2 more meals! Yaaasssss. The way you teach cooking mushrooms, the cast iron press method... LIFE CHANGING. I made some Crimini and they were amazing with the tofu. Thank you!!!     We hear comments like this a lot-many people feel the same and have mixed feelings about eating mushrooms. But I promise you, if you try them the way we show you in this video and some of our other ones (especially the Pulled "Pork" Sandwich, "Chicken" Noodle Soup, and BBQ Mushroom Steaks), you'll have a completely different opinion about mushrooms!

    Looks so good! I love letting my tofu sit in a marinade of vegan bouillon and spices. You can flavor your tofu to taste like anything! I love it!

    I've made this so yummy, but I did some vegan butter, chopped chillies, spring onions and garlic in pan nice source for the tofu x

    Hey, Guys! Heard of you guys via Rip Esselstyn's podcast/interview with Chad last year, but never viewed any of the Wicked Healthy videos until last month. Great how-to videos in almost-real-time and good humor! I am a desktop chef at work, and lately I've been cooking vast amounts of sauteed or seared mushrooms into my meals - potatoes, stir fries, and even salads, so I looked you up. I love the technique of searing mushrooms on their flat sides until they turn golden brown. It works well for me, and I don't even use oil, just a few seasonings and the mushrooms' own moisture. I am on the lookout for those large king oyster (?) mushrooms you use in your "meat-like" recipes. Would love to try those, but I've yet to find them in any stores here in Washington state. I am so grateful for what you are doing to "be the change," and I wish you the very best!

    IDEA FOR A FUTURE VIDEO............Wonderful channel! Just found you. I wonder if you could do a wee series on how to do things with veggies that arrive seasonally in a veg box? I'm a pretty good cook. I enjoy seeing what arrives and thinking up something delicious to make. I feel fortunate to have this skill. It would be great to promote not only veganism but buying veg with no packaging. Mother earth needs us to stop single use plastics. I live in scotland so root veg is in the main in winter but spring summer...... all superb. Id like to learn more things to do. Thankyou.
