I want to see a recipe video where you cook purely for taste - use oil, salt, sugar, whatever but make truly delicious foods. Mina Rome does some recipes like that which are super entertaining. I think you have to show that vegan can be fun too.

I’ve been there, too. It’s so hard, because you literally don’t have the energy for even the basics, let alone the time and effort to cook three healthy meals (+ snacks?) each day. One thing I’ve found helpful is to keep a lot of quick (but still healthy) options on hand, like whole grain bread, dried fruit, pre-cut veggies, canned beans, fresh fruit, etc. Also, on the days when I do have more energy/motivation, I’ll batch cook something to have for several meals. The other day I made a huge pot of daal, and also cooked up some buckwheat to have with it. Now, I just have to put some in a bowl and microwave it. Total time, including washing the dishes, is about 5 minutes. It’s about as much effort as ordering delivery or making a microwave meal. It’s not a perfect system, but it’s made healthy eating doable with MDD. I wish you healing and wellness. Depression can be so debilitating, but it can be treated and overcome. God bless.

Definitely needed this video, Hannah. Been vegan/plant based for almost 3 weeks now and I'm getting bored with beans and rice and although I'm eating plenty (I made vegan pasta/spaghetti, veggie burgers, vegan tacos, etc) I'm getting low on money and I'm trying to just eat what I've got in my pantry that's vegan, because my husband and kids are not vegan and I'm just left with beans and potatoes and the kale, swiss chard I've been getting from the community garden (I ate my last Orange last night) until I can get to the grocery store. I plan to try some new recipes once I'm able to get more from the grocery store....

I am german and lived abroad for many years and even if there where german bakeries it has been nothing compared to the bread you get in Germany. Whilst beeing overseas I started baking my own bread which is quite easy and very tasty.

Unfortunately, its become a negative loop of eat poorly, feel poorly, do make the time to eat better... and so on. Inspired to add these changes and switch it up. #stayvegan

I’m all for supporting local bakeries - that is definitely the place to find tasty bread! I’d also recommend Ezekiel brand bread. The recipe actually comes from the book of Ezekiel, in the Bible! It’s made both with whole grains and legumes, and the low sodium loaf has no added salt. I think it may be the healthiest bread there is. The carb:fibre ratio is very good. It’s quite hardy, so not the best bread for dainty tea sandwiches, but I love it for avocado toast, a baked tofu sandwich (I grew up on these!), or toast with nut butter. The great thing is that it’s pretty easy to find. I see it at most supermarkets, including Trader Joe’s.

@@dandelionk9603 Oatmeal and fruit are straight carbs and if a person is insulin resistant, even a little, their sugar levels will spike right up! It’s protein and fat that really lessen the carb impact. That’s why I said in a diabetic state I could handle seeded bread and half an avocado since the ratio was 27g carbohydrates (dietician said 30g MAX), 12g fat and 6.5g protein. It was definitely not high protein but it worked. Eggs are usually the go to.

I often have problems, even with heating, with my corn tortillas splitting when I wrap or during cooking. So what I often do is lay them in 2 layers, with filling in between, the sauce on the top and bottom. I like green olives to top mine, and guac after cooking. Then it comes out like lasagna, great flavors with no falling apart tortillas. I've never used potatoes, I like that idea. Thanks

I appreciate this video and all of your videos! They have been so helpful on my own vegan journey. I’m 95% vegan I’d say and I have been for 5ish years but have ALWAYS struggled with getting enough calories and staying hormonally balanced. You talk a lot about weight loss and staying satisfied but how do you ensure you’re eating enough? Getting all of the required daily vitamins including iodine, iron and calcium. A well rounded vegan diet tends to be higher in fiber so it’s easy to feel *full* quickly. Would love to see content a little less focused on weight loss as well.

Its not normal to ALWAYS struggle with staying hormonally balanced. With a normal diet you would NEVER even think about it. You need animal fats for healthy hormones. Its also the best source of macros for getting calories.

Enchiladas don't need to be that complicated. An enchilada is just a rolled tortilla (originally corn) filled with something and covered with salsa. Traditionally it is not baked. Mashed beans, potatoes/sweet potatos, chiles and vegetables are comon fillings.

Honestly, these are all amazing recipes and I would eat like this if I was... rich. Right now food prices in our country are so insanely high that there is absolutely no way that I could have those meals in one day, let alone together with my husband and kid, everyday and still be able to pay for anything else in life... I'm not saying being a vegan is expensive, 'cause we are a vegan family, but literally that salad would cost me about 8 euros a person... I wonder what that's like in California right now, because as I said, I love your recipes and I really like you, but this video is completely irrealistic in my world.
