1. HOMUN
INTERVIEWEE: Gaspar Alejandro Chuc Cetzal
🇲🇽MORCILLA: Place the raw pig blood in a pot. Chop meat, peppermint, green onions and add to pot. Stuff the intestines with the blood mixture and secure the casing with a string. Boil for 20 minutes, then fry the sausage for another 20 minutes. Add onions and habanero peppers, then remove from the fire. Serve with tortilla.
🇲🇽OIL: Take all of the fatty parts of the pig (some meat chunks) and add them to a huge oil drum.Place on fire to render down the fat to a liquid for frying.
🇲🇽CHICHARRON + CASTACON: For Chicharon, take the skin and place it in the oil. Let it boil for a few minutes until finished. Remove all of the hair of the pig. Remove from pot. Add the cooled-off chicharron back into the oil drum for frying. | For Castacon, fry the original meat chunks that were used while creating the oil.
🇲🇽TORTILLA: Roll the mashed corn into a ball, then flatten it. Place it on the grill for less than a minute.
🇲🇽COCHINITA: Squeeze a lime in a bowl and add achiote and salt, then mix. Coat the pig as it’s added to the steel box. Place in the hole and allow it to cook.

    I really do like this show but I feel he's more an Andrew Zimmern than a Bourdain. Anthony had that dark sarcasm and wasn't afraid to show his damage. Sonny is more upbeat overall and tosses in some sarcasm here and there.

    I appreciate the acknowledgement with the comparison to skinning a shark that many people likely do not have that experience. I saw a video once where they were dead pan explaining the flavor of a food to termite grubs flavor...as though everyone in the world had experienced the flavor of a termite grub

    I wish they make captions available in the native languages for the country that they’re visiting. I’m sure all his guests and individuals featured in the episodes would love to go back and watch his adventure or even just the part of the video they were featured in... I’m sure they’re curious! I would also love to show this to my grandma who mostly speaks Spanish

    As a Mexican it’s a joy to see that people like Mexican cuisine and culture. This video is of the Mayans of Mexico and the culinary technique of the Mayans of Yucatán, Mayans don’t cook the same especially within the different groups of Mayans in Mexico. Mexico has the best Mayan dishes unique only to Mexico. There is Mayans in Central America but the recipes in Central America are very simple and not that diverse the contrast of the Mayans of Mexico.

    As ALWAYS a fun, fascinating, well-done foray into food and culture. Never need to skip or fast forward! As someone who has worked for years with the Maya and has been studying Meso-American ancient cultures and sites for decades, I just want to add: The word "Mayan" only refers to the languages. When referring to the people and/or culture you use "Maya." i.e. "What sort of food do the Maya eat?", "Is Maya food typically spicy?", "Are you Maya or of European ethnicity?", "What do you know about the history of the Maya?" As you probably know standing next to the pure Maya, the Indio, anyone of European heritage will tower over them. I'm 5'11" and with 99% of them, I could rest my elbow on the top of their head and read a book. By Kay's facial features and height, it is obvious when she's standing next to the Maya ladies that she is Mestizo, and not 100% Maya. Menac is Quiche, so her dad is at least 50$ Maya and likely her mom is Indio. I also never met someone that was Indio or Maya and couldn't speak Quiche and some dialects. It's nice to see someone as young as she is being interested in her roots - this is one of the things I love about this show and what Sonny does for many of the co-hosts.

    There is no such thing as the “European” standard/ “Eurocentric”. It is an American made up ideology to push White American/Northern European white supremacy. Europe is a continent not an ethnicity nor a race just like all continents. There are different European diasporas in regards to race and ethnicity and genetic DNA origins. Are all Asians one ethnicity/race? NO. Are all Africans the same? NO. Are all Americans the same? NO. Europe has always been a multi cultural, multi ethnical and multi racial continent due to the Mediterranean and due to the fact that parts of Southern Europe are closer to Africa than mainland Europe itself. I am of Southern European Latin Mediterranean diaspora specifically southern Italian Latin Mediterranean diaspora and we look absolutely nothing like Northern European diaspora due to our differences in ethnicity, race and gentic DNA. And we have typical brown Mediterranean features with olive skin which browns very easily due to melanin production in our skin. And yes we as Mediterranean people have wavy, deep waves and curly hair. Not straight. And yes for the uneducated North Americans and other uneducated countries that have been influenced by the USA REAL ethnically Latino men and women are us people who are predominantly racially Mediterranean and of ACTUAL Latin origin as we descend from the REAL Latino Mediterranean ancestors of ITALY and Roman derived LATIN EUROPE due to our ethnicity from the REAL Latino Mediterranean ancestors of ITALY. The American misappropriation, mutilation and cultural Rape of foreign Latin European terms needs to be exposed. During hitlers time we were called “the chaotic Latin Race” by Northern European supremacist. And still are called Wogs, terrone etc. By Northern Europeans. There are No “white” Mediterraneans. Just more cultural assimilation, cultural erasure and cultural negation in order to achieve cultural erasure of many people. I suggest Learning actual European history if you’re going to attempt speak upon it.

    In my personal opinion, Sonny has kind of taken over the role that the late great Anthony Bourdain held. It's not just a travel show or a food show, it's a show about fearless cultural exploration. The only difference I would say is that Sonny is pure wholesomeness, whereas Bourdain was edgy and very counter-culture. But I think they both share the same life mission.

    As a very proud Young Mexican women With ancestors of different regions/ states of Mexico and with professional family members that are chefs, I would like to mention that the Mayan culture is very diverse, the Mayans in Mexico are very different among themselves, Mayans are separated into different sub Mayan groups, each Mayan sub groups have very different gastronomes ( different ways of cooking and invented different recipes) traditions and speak very different Mayan languages. This dish cochinita pibil is a unique recipe only to the Yucatán Mayan people of Mexico with yes influence of the Nahuas indigenous people of the central region of Mexico ( making a hole 🕳 and cooking food under ground for many hours in Mexico originated from the Nahuas ancestors of the Aztecs). Nixtamal, tortillas, atole, tamales to just mention a few, were invented my the Nahua indigenous people not Mayans ( nixtamal, tortilla, maíz, atole, tamales are Nahuatl words from the Nahuas not Mayans…. A fact that can be researched). The Olmecas indigenous people of Mexico are a civilization that existed long before the Mayans and the olmecas discovered cacao ( chocolate ) in precolonial México and introduced it to other indigenous tribes of Mexico Mayans, Aztecs, Zapotec, ect. Corn 🌽 originated in México and the indigenous people of México domesticated it in the high lands of central Mexico ( the Mayans were not the first civilization to discover corn they were introduced to corn ) and after many years introduced it to other indigenous tribes in Mexico 🇲🇽, after many years corn was introduced to all the Americas.

    the oldest corn was found in southern Guatemala same with the oldest cacao dna. all the central Americans were the same people with a tiny bit diff cultures but olmec and maya are the names given to them thousands years after. the "Maya" though are the longest running civilization of people in the Americas along with the Inca. the aztec were only around the same amount of time as the europeans, both have very little connection to the Americas and its history.

The olmecas/ olmecas is a civilization older than the Mayans, it’s the olmecas/ olmecas and the Incas that are the oldest civilizations of the Americas it can be researched. Corn 🌽, cacao originated in Mexico not Guatemala look it up, international agriculture engineers have confirmed it. The olmecas were the first civilization to discover cacao chocolate and domesticated it they invented drinks and influenced the indigenous tribes of Mexico and the Mayas introduced the cacao to the tribes of Central America, look it up it’s confirmed, you learn this in middle school. Mexico is part of North America, Mexican culture is unlike any other. The countries in Central American are not similar each has their own culture. Based on your comment it’s obvious your Guatemalan or Central American.

    @@krono5el the first people that discovered the Americas arrived by following the mammoths 🦣from Asia they settled in what is the territory of Mexico due to the territory having the best climate in North America at the time, experts theory is that groups of people from Asia kept coming to the Americas and spread throughout and became different tribes. There was little civilizations that existed before the olmecas and Incas. 1 to 2 years ago there was a important discovery in a cave in Colombia that is older than the Inca civilization and it proves how people immigrated from North America to South America and witnessed other tribes. Due to the Mayan train construction in southern Mexico, Mexicans are finding a lot of important artifacts that we are going to learn more about the olmecas/ olmecs and their ancestors 😉 and old history of the Americas.

Central Americans were all people of corn and cacao. its obvious when the corn found in central america is older than the sites at vera cruz. civilization was happening everywhere and sharing. guatemala just means jungle anyway.

    It’s not the same technique but a bit similar, in Mexico the pibil from the Mayans of Yucatán and the barbacoa from the Aztecs and Nahuas and other indigenous tribes of Mexico cook food under ground with different unique ways than any other countries. In South America the pachamanca cooking method of Peru is a bit similar but not a complete cooking method of its own.
