I too know what its like to have a full time job and manage a youtube channel...lol. I can only squeeze in new content on the weekends as well. I have made several purchases based on your reviews and my knife sharpening skills have improved thanks to your video! I would love to do a sharpening demo vid with one of those giveaways. Keep up the great work you're doing!

Also, thanks so much for the bonus nikiri...you must be a mind reader cuz it was exactly the knife I was wanting! I already have the Mercer Asian Collection santoku. i think the design copy thing with the other "creator" is a non issue as its not claiming to be the thing it claims to be a inspired design. now im not in the market for either a ks or a "copy". i also couldn't care less where a knife comes from or if its made by machine or man as long as it provides value and a good experience on my part. the victorinox has been on my amazon wish list for a while would be cool to win one. thanks for being honest as always
