Taking a first look at the Misen 8in Chef Knife - Made with Aus-10 Steel and a 15 degree grind on the edge. I can't find what they used to make the handle so I can't confirm.

    I'm a new subscriber. I came across your video about these Misen knives. They're a GREAT knife company! We use them all the time! Well made, well balanced in the hand. Nice for chopping and slicing a lot of stuff. My experience with them is incredible. My wife accidentally snapped their serrated bread knife in half. Yes she was cutting semi thawed meat with it. But when it broke, we notified the company and sent in pictures. They sent us a new knife, no questions asked! She also bent the tip of a chef's knife somehow and they also replaced that one as well with no questions asked. You don't need to send them back either! They're such a great knife that we gifted a set to our friends for their wedding present! They love them! I could go on and on, but an excellent product! Great review as well! Spot on!

    Why are you cutting almost thawed meat with a serrated knife?

    @@johnathonglanzer4487 My wife did this. She didn't know so she thought she would try it! The company was excellent to replace it no questions asked. We told them what honestly happened and had they no issues at all. We've actually sent out several sets to friends and family as gifts and they love them. Great quality knives!

    My first task after cleaning it was to dice an onion. When attempting horizontal cuts, I was a bit surprised on how much force it took for a brand new knife. After that, I tried the "paper test". It was a miserable failure. Misen said they would happily sharpen it for free since the knife wasn't as sharp as I "felt" it should be. In my book, the paper test is an excellent benchmark. If it fails, it's not sharp enough! It has nothing to do with my interpretation of "sharpness".

    I think you are right about the price point per quality. For $65 you are now getting close to what Tojiro DP and Yaxell Mon chefs knives cost when on sale (Video idea!) Those knives are way sharper and made in Japan, not China. But some folks may prefer this profile and design. Keep up the great work!

    Funny I was looking at reviews on amazon, and some person was crying about rust. Another person said theirs broke in half from washing it in a dishwasher ??? Idk how you break a knife in half, but the only thing I could thing of is it fell into the blades of the dishwasher, and the other person could've just dried the knife before putting it away...and I see there is a info sheet within the box...!

    Quick question unrelated to the knife in this video, but do you have any opinion on the Mercer Culinary Ultimate White vs. Millennia? They're around a similar inexpensive price point but with different edge grinds, so I'm curious for which line I should go with that will be better in the long run with a lot of food processing. One other odd thing I found is that the Ultimate White is harder at around 56 HRC while the Millennia is at 53-54 according to their website.

    I would have thought that Mercer would have used the same steel for those lines. I know that they advertise the hollow grind on the ultimate white but I think they have the same grind offering from the Millennia line. The handles would be different and I think the Millennia handles are very comfortable but I haven’t tried an Ultimate white to compare. I would think the handle is the same as the scimitar since it doesn’t have santoprene. If all things were the same in the steel, I’d go with the Millennia for the color options and the santoprene.

    @@JPMCuisine Thanks for your insight. Also, is there a kind of fine trench/channel separating the two materials in the Millennia handle, or is it a smooth transition? I see these channels on the handles of their Hell's Handle kitchen utensils (albeit composed of a different plastic) which I dislike since I can't fully wipe out any trapped water in there with my paper towel.

    It’s relatively smooth - the hard plastic between the top and bottom santoprene is slightly raised but there are no gaps or channels. Really easy to clean.

    Hmm That’s a tough one. They mostly sell mainstays and farberware. I’ve used farberware and never enjoyed sharpening them. They never seemed to take a clean edge. I’m thinking for the price, I’d go with the forged in fire set but I have very low expectations for that set. I do want to try them now that I see them.

    I prefer the Classic feel of the Renaissance handle over the Zum.

    @@JPMCuisine good! Cuz there isn’t enough info about mercer in my country. Last question.. mx3 line is sooooooooo much better than renaissance line? Is it worth to pay more?

    Yes the MX3 are great knives. Comparable to Tojiro DP if those are available.

    "The Holy Grail of..." typically is used to refer to a good ratio between two often opposed attributes. Another way of saying, "for the price, this is good quality." in this case. Its not that obtuse of terminology.
