    Hello! I want to say I love this recipe and I’ve had a lot of fun making it! I do have a question though - after making all of the ingredients, at the cooling section, my ice cream has been on the counter for above 20 minutes and it’s still hot. My question is what approximately should the temperature be? I’m thinking room temp but I’m not sure.

    Hi! Thank you so much, I'm happy to hear you're enjoying the recipe! It doesn't need to be room temperature, but it should be cool enough to touch. The main reason for cooling first is so that it doesn't warm up your freezer. Do you live in a hot climate? This can slow down the cooling period. To speed things up, I recommend using a wide container (rather than a tall one) and place it in an ice bath while stirring. Usually I find just the ice bath is enough, that's why I cover it and leave it without doing anything. It should definitely be cool enough in 20 minutes or less if you use those tips.     thank you for the recipe. I just made this, it was pretty easy and tasted really nice! mixed it 6 times every 30 minutes and it turned out nice and soft after a final ~3 hour freeze. I took it out about 5 minutes before serving but when I went to scoop it was already really soft I do have one issue though, the texture, while soft, is a bit sandy? I think maybe I didn't freeze it for long enough; I'll leave it overnight and check again tomorrow :) also for some reason I can taste a hint of sweetened condensed milk even though I didn't add any :D

    Thank you for following our recipe and such detailed feedback! I do find that after 3 hours it's just about firm enough to eat and doesn't really need the 5 minutes on the counter (This is more for if it's been in the freezer for longer) Sorry I didn't make that clear! Homemade ice cream does tend to melt quickly because it doesn't have any stabilizing additives that companies use. The texture shouldn't be sandy and I haven't had that problem myself, not sure about the reason for that. I looked up some causes and all I could find is sometimes the type of sugar can make it grainy or if the egg clumps together when cooking the custard. Hope it's better the next day! Thanks again :)

    @@SudachiRecipes thank you for your quick reply! I left it overnight and the sandy texture is gone now! :) the ice cream is also already gone and in our stomach x) will definitely make another batch soon

    Does it have crystal ice texture? When you don’t use ice cream machine.

    If you churn it enough times it shouldn't have an ice texture, that's why I recommend churning every 30 minutes. Of course it's more effort than using an ice cream machine, but this is a recipe for those without an ice cream machine. (The same recipe can be used in an ice cream machine if you have one.)

    I know it says 6 servings but how many oz or ml does it make? just wondering if it's worth the time vs. buying. thank you very much.

    6 servings is based on Japanese portions of two small scoops per person so this is just an estimate. I'm not sure about oz, but I would say it makes about 550ml of ice cream. It's easy to double or triple the recipe, although will take longer to freeze. Hope you try it, homemade matcha ice cream is truly delicious!
