Crepe Batter
- 80g unsalted butter | 無鹽黃油
- 496g whole milk | 全脂牛奶
- 4 eggs | 雞蛋
- 40g sugar | 砂糖
- 1g salt | 鹽
- 110g (1 cup) cake flour | 低筋麵粉
Matcha Custard
Heat following mixer:
- 4 egg yolks (~72g) | 蛋黃
- 65g sugar | 砂糖
- 20g cornstarch | 玉米澱粉
- 1g salt | 鹽
- 420g whole milk | 全脂牛奶
Whisk constantly remove from heat
Then mix:
- 8g vanilla extract (1 tbsp) | 香草精
- 30g unsalted butter (2 tbsp) | 無鹽黃油
- 20g matcha powder (3 tbsp) | 抹茶粉
Matcha Cream
- Matcha custard | 抹茶卡士達醬
- 300g heavy whipping cream | 重奶油
- 15g sugar | 砂糖
Topping
- 6g matcha powder | 抹茶粉

    Never made mille crepe with custard mixed with cream before . Please let me know if this make the cream feels heavier? Or tastier? Any significant difference if only use plain whipped cream? Thank you

    Hey yes it will be heavier creamier I like the heavy texture when combining with crepe. Also it helps to support the multiple layers. If use plain whipped cream it might be difficult to layer it up to this high. And it will also have a much soft and lighter texture when eating too.

    Sorry I don't remember which one I used in this video but any Japanese culinary grade matcha should be good 😊

    Followed this recipe it was a little bitter but it looks gorgeous which is why i choose this recipe. Might need to modifiy it to be more sweet.

    Thanks for trying out the recipe! It could be due to a different brand of matcha powder. They do have different levels of bitterness. But yeah feel free to add more sugar to it to fit your own taste :)
