મસાલો વઘાર્યાં વગર વર્ષભર સચવાય તેવું ગોળકેરીનું અથાણું | Gol Keri Nu Athanu, Gor Keri, Mango Pickle

Gol Keri Pickle is a Gujarati Pickle made from raw Mangoes, carrots, kharek spices and Jaggery. the preparation of raw mangoes is important here. Also maintenance of cleanliness and hygiene of each and everything associated with making this pickle is very important. This is the key to maintain taste and texture of pickle for whole year.
I learned this traditional recipe from my grandmother and I make this delicious pickle every year with this method. The pickle remains fresh and same in taste and texture entire year. Today I am sharing traditional Gol Keri Nu Athanu Recipe.
This pickle is best match with Rotli, Bhakri, Thepla and as side dish with any breakfast, meals. I hope you would like this recipe to try at home.

INGREDIENTS:
1 KG raw Rajapuri Mangoes (कच्चा राजापुरी आम)
2 tsp Salt (नमक)
½ tsp Turmeric Powder (हल्दी पावडर)
¾ cup split Coriander (धनिया कुरिया)
25 grams Split Mustard (राय कुरिया)
20 grams Split Methi (मेथी कुरिया)
50 grams dried chopped Carrot (गाजर)
50 grams dried chopped Kharek (खारेक)
Chopped dry Red Chilies (सुखी लाल मिर्च)
1 tbsp Black peppers (काली मिर्च)
½ tsp Hing (हिंग)
¼ tsp Salt (नमक)
¼ tsp Turmeric Powder (हल्दी पावडर)
¼ cup Red Chilli Powder (लाल मिर्च पावडर)
1.5 kg Kolhapuri Gud (कोल्हापुरी गुड)

અમારે કેરીનું અથાણું બનાવવું છે તો ક્યારે મીઠું ભેળવીને અમે રાત્રે કપડામાં બાંધી લટકાવી રાખવું છે અને બીજા દિવસે સૂકવીને મસાલો ભેળવી ને પછી એમાં ભરેલું છે તે બરાબર છે કે
