Martha Stewart Teaches You How to Deep Fry Foods | Martha's Cooking School S1E12 "Frying"

The very best fried foods are golden brown on the outside and deliciously tender within - never greasy or soggy. Yet frying on the stovetop is a technique that can elude even the most ambitious home cook. In this episode, Martha offers lessons in how to deep-fry and pan-fry to perfection at home in your own kitchen. Recipes and step-by-step techniques include French fries, pan-fried chicken (a Southern favorite marinated in buttermilk before coating), and Japanese tempura vegetables with dipping sauces. She shares lots of tips for keeping foods crisp without allowing them to absorb excess oil.

I’ve had a life time of cooking gardening and homemaking lessons from Martha. It’s wonderful to see you looking so beautiful and happy. Truth be told use those mandolin’s with extreme care. I can’t even look at one since I got cut. Love you Martha, thanks for all you do💝

I love mandolines. Suggestion: get a "cut resistant" glove from any restaurant supply store Bed Bath & Beyond, Microplane website, etc. "No Cry" is one brand. You want a "cut rating" of "5" which is the highest level and it will block a blade. Then you can mandoline safely and confidently.

I absolutely adore Martha, and have learned a lot from her! However, to flour the veggies prior to battering them, I think a stainless steel bowl would have worked better so the veggies could be tossed with the rolling motion of flipping them in the bowl as a cook flips something in the skillet. It would have given more coverage. I also would have used more flour in the batter and perhaps allowed the batter to rest a while before using. Just saying. I'm no tempura pro or anything, but I think those methods are good. I will steal her idea of using the stainless steel chopsticks, though! I have bamboo cooking chopsticks, but never thought of using stainless until watching this episode. Also, it's not necessary, but the fries (save the gauffrettes) can also be salted in stainless steel bowls, using the same flipping motion and that would distribute the salt more evenly. Stainless steel bowls are failsafe to use because they're practically indestructible and so are almost always a win.

I didn't catch the temperature for the tempura frying oil. I love zucchini tempora, with salt, butter and lemon it reminds me of scallops. Very tasty. I got two sweet potatoes staring at me. I'm going to try your recipe in the morning. Thanks for the idea. Did you have to throw the old man out of the kitchen while you were making the fried chicken?
