Yes! I try to make a 1.5 lbs loaf weekly for the family (alternating between white and whole grain varieties). You made brioche look easy to make! If I master it, then I’ll add it instead of regular white bread once a month 👍.

All kinds. At home an I used to work in a bakery. It's been awhile since I saw a cake yeast that big, I would have so much fun trying to use that up an sharing goodies with friends an family.
I got my first Kitchen Aid when my daughter was 11. When she graduated from college 10 yrs later I gave it to her and bought myself a new one. The 33 yr old one still works and so does my 22 yr old. Both were used hard. My secret is never run your mixer so long that the motor gets hot. Kneading processes can do this so I stop the machine frequently, clip a towel over the top of the bowl and let it rest for 15 mins. I will do this at least 4 times. Works like a charm and your machine will last a LONG time.
I'm already a baker/pastry chef but watching Martha always brings me back to when I was a young girl pursuing my dreams. Martha was one of my biggest influence on why I wanted to be a baker... her Martha Bakes videos always brings warmth to my heart. ❤️

In Sicily they serve ice cream in brioche. So decadent and very delicious!
Use a wooden stick to mix yeast and warm the bol. Metal decrease the temp of the water.

Yes. 1 ounce fresh = 28 grams Use one third, 10 grams, or 2 teaspoons

This was the first time I’ve made a brioche dough and it was fantastic - I divided the dough and made one as a loaf. With the second portion I improvised by rolling it out into a rectangle, made a cinnamon, brown sugar and pecan crumble and made into scrolls. Great recipe!

Yes! I make bread... Occasionally I mill/grind prairie Gold hard white wheat, which I love! I make loaf/sandwich bread, rolls and biscuits... but never brioche before now! Thanks for the tutorial!! Question... who makes that beautiful bread knife?? xoxop

great technique, looks lovely! A baba dough (and a savarin dough while we're at it) are rather different from brioche doughs, though ;-) at least according to classical french cuisine
Thanks Martha. They turned out beautifully. I have a convection oven but is is gas. So I think the oven runs hotter. Next time the only adjustment needed is lowering the heat setting. Other than that it was a really good first experience Next time I’m going to try lowering the oven setting as it got a little br

you can freeze this kind of yeast. They will be ok. Just add sugar when thawing.

What type of flour do we use for brioche?
Can't readily (or affordably) find cake yeast. How much instant/self rising should I use? Also in 5 Tbs warm milk? Thanks
I plan to give brioche a try today, but I don't have fresh yeast. If I use dry yeast, is it regular or quick rise that I'd use? I'm assuming the amount used for dry is different if I use dry yeast rather than fresh. How much do I use? thanks

With such a long rise, use active. Instant would rise and fall (overproof) during that second 8-hr rise.
