I love cooking food and love making food from scratch but to this level. The judge's palette needs to be so acute to taste, flavour, be able to recognize each and every individual item in their mouth means that the chef making this dish also knows and understands each and every item they use can make or break the dishes experience to the consumer. Result, AWESOME.

Fermented Hispi cabbage? Doesn't that take days to make, or can contestants bring in pre-made foods like that?

I mean, these judges are sampling nine dishes in total. I don't think they're looking to leave in food comas.

Its quite clear in the context it was said it didn’t mean evil. It clearly relates to the great size of the task. Collins Dictionary “If you refer to the enormity of something that you consider to be a problem or difficulty, you are referring to its very great size, extent or seriousness”

Use tongs! Too much touching of the food. I couldn’t eat it. Wiping sweaty foreheads, touching door handles, then the food - I know, I have a problem.

Chefs touch food. You're creating offense were there needn't be any. You better not eat out. Furthermore, no one is wiping sweet with their hands.
