Marco Pierre White and apprentice Gordon Ramsay

I find Marco Pierre White is an interesting character. In this video from 1998, as a 37 year old he seems very calm, mellow, and not so easily rattled, a stark contrast to his former apprentice Gordon Ramsay.
Of course this was one year before he was about to retire from cooking in 1999, and throw away all his stars. Interesting for him to say that "...retaining Michelin stars is playing a defending game..."

The best part of this clip is the fact that, in his autobiography, Marco says that before this Gordon had never fished a day in his life, but he had told the producers of Boiling Point that he and Marco went fishing every week because he thought it would make him look cooler. When Marco politely reminded him that that wasn't true, Gordon basically said "I know, but I've already told them, and they wanna film us go fishing". Marco begrudgingly went along with it, and you can tell Gordon hasn't a single clue what he's doing.

For anyone who's into Roman history, Marco and Gordon are perfect parallels for Marius and Sulla. Sulla learned everything he knew from fighting under Marius, Marius was down-to-earth and calculated and Sulla was a firebrand redhead who always tried to outdo Marius. Marius revolutionized his field, while Sulla became one of the most notorious faces in Rome.

Master is trying to retain it as he also teaches his apprentice who is trying to obtain it from his master. Not only are they both comrades in the same field as one another they are rivals at the same time trying to become more powerful than one another with the Master knowing his succession is coming soon.

Gordon was a master of self-promotion. The first I heard of him was when he threw out A.A. Gill, a food critic (which was newsworthy because Gill was accompanied by Joan Collins, who by extension also had to leave) then tipped the news off about it and gave interviews about it. Boiling Point came out shortly afterwards.

Man this would have been him at his worst, see, this was him at 2 stars fighting for his 3rd, imagine working in the kitchen with him for 16 hrs a day, it would have been very tough. i worked with chefs that worked for him a little later on, apparently one chef called the police on him during service.

Gordon is what he is, as focused shooting for one star as he is for three. Those guys followed him when he walked out of Aubergine. That's how loyal they were. Him on TV now is the same BUT, I never heard him dress down juniors, only his seniors. That kitchen is run with military precision and discipline (OCD levels) Most people who've never worked in Michelin kitchens in the 80s, 90s early 2ks can't imagine what it's really like. (Even chefs who never worked in one. I was called a 'bullshiter' by a commis until he went lol.) A lot of comments here with half baked ideas... The kitchens at the time were all full of mostly young working class men who spoke direct, didn't mince words and gave a straight opinion. It was not very PC and 'hurt feelings' was confounding, as 'it was just work'.

I like how Gordon seems like a puppy jumping around the massive rottweiler when they're fishing. Just so happy to be there, chatting away while Marco does his thing
"He realised standards were most important." This alone proves that Ramsay brings the same mentality to Hell's Kitchen. How many times have we heard him say something like "Your menu, my standards" when the teams are tasked with creating their own, or in the final? He takes the show seriously. It isn't scripted at all. It might be heavily edited for the purpose of drama, but it's still as real as it comes for Ramsay and those competitors. That's why winners like Christina have done so well for themselves.

Fun fact: Despite having a master-apprentice relationship, Marco and Gordon were born just 5 years apart from each other (1961 & 1966).

Gordon learned how to respect before he started asking for respect, and that's what matters the most.
That's how masters should be like - wanting to see their apprentice shine, without feeling any kind of insecurity. Respect for Marco. ❤
"When (sic) Gordon wins his three stars in the Michelin.." I appreciated this small bit of professional support. Not "if" but "when", and in regards to an award that he himself desired so much that once he had it, he retired for over a decade. I don't believe Marco hates Gordon, I believe he loves him. Its excellent to see the teacher appreciate the strengths of his flock.

Marco isn't the kind of person who gives empty praise; you can tell he respects Gordon's skills and attention to detail
So this is where Gordon got his famous temperament. Marco is just a beast! He yells, screams, cusses, short-tempered, throws things...just imagine what Gordon would have been with a calm master.

This is so interesting to see my idol chef Ramsey being complimented on his techniques before he was 3 star and to see and hear from one of the men he learned from. We all had to start somewhere. Thanks for posting!

mocztenora I wonder what Marco thinks of Gordon now that he is pretty much the most famous and loved chef in the WHOLE WORLD, which probably makes him one of the richest too. Between being a 3 star chef, owning multiple successful restaurants, starring in many popular TV shows, having books and documentaries about himself, and even running his own cooking tutorials, there is nothing Gordon hasn't done! Ugh I love him too much, obviously! 😍 hahhaha!

When Marco says to Gordon "let it work, let it work itself" it reminds me when Gordon says "Let the knife do the work" when teaching other people.
I've seen a lot of people like these two in hobbies that revolve around mastery. You've got the people who are absolutely dedicated to a skill, reading up on and observing others' work and constantly trying to think up what little changes can be made to improve their technique. And then there are those who are extremely competitive, often spending thousands of dollars and putting in many hours of physical work trying new things that could help them surpass their peers.
They are like Quai Gon Jin and Obi Wan Kenobi against the bad side of cooking.

Marco is the mentor type, the way he algorithmicizes the process of cooking made Gordon who he is now.
Every master of every class talks like this. The very best painters, HVAC installers, handmade men's suit tailors, endurance athlete, every world's best whatever, they have THE THING. That something that only allows for perfection. Unrelenting, unwavering, perfection. It's f-ing amazing if you are ever lucky enough to see it in action. Awe does not come easy for me, but I am in awe of the true masters of the world.

+Ben Lock Well, when you go to a fancy restaurant you don't just expect a fucking meal to stuff yourself do you? You expect a a great dining experience worth your bucks. He don't mean literally dream come true of course, maybe for a connoisseur it is. It's really about meeting the expectation and all the hopes they have when they choose to dine there. In fact forget about fancy dining, I hate feeling disappointed whenever I go to McDonalds or KFCs, when the food I get is nothing like they portray and advertise it to be. Imagine spending the real bucks, going into a fancy restaurant all fancy, probably for a special occasion, only to be let down.

Just learned about Marco Pierre about 15 minutes ago, now I can't stop youtubing him. This dude is INTENSE and I understand Gordon Ramsey sooooo much better now lol
I was in Los Angeles years ago when I came across Gordon Ramsay in a restaurant supply store. He was preparing for his U.S. TV show. He was beautifully respectful and QUIET to everyone... He is tall and handsome. I swear some bystanders went gaga over him. Ever since, I think all his yelling and screaming and profanity were for the U.S. TV audience.
I can see it in his face, marco is proud of his creation
Gordon's the most competitive person ever. He has close to 20 years of hosting cooking competitions for people to train under him
