Mango Bravo Cake Recipe | Conti's Frozen Mango Bravo Cake: Cashew Wafers, Chocolate Mousse, Mango

This cake is inspired by the famous Mango Bravo Cake from Conti's. This cake is composed with Cashew Meringue Wafer, Chocolate Mousse, Mango and whole lots of cream.
Here are the ingredients:
For the Meringue:
10 egg whites (at room temperature)
1 cup white sugar
1 cup cashews
1/4 tsp cream of tartar
chocolate mousse:
1/2 cup dark chocolate
1 1/2cup heavy whipping cream

Just a tip for the stabilized whip, you want to add a large dollop of the whipped cream you made into the liquid gelatin and mix well, then slowly and gradually pour into the whipped cream, until medium peaks. this will create a smooth stabilized whipped cream. (your method has lumps of gelatin which will clog piping tips, affect mouth feel texture, look, etc.) do not overwhip or that will cause gelatin to spin out and affect texture.

Can i use ambiante for the heavy cream?
Made this today, and it tastes just like the real thing. Thanks for the recipe! I reduced to 80% since i used 6in pans. Mejo nasunog ko yung meringue wafers hehe next time i'll shorten the baking time and lower the temp. How did you slice it so perfectly? Mine was so wobbly. Did you freeze the cake first?

Hello po. Once cook na po ang meringue at na remove na po from the mold return it to the oven po to dry Over a very low heat.. or once cooked turn off the heat and leave it in the oven until it cools down.you can skip this but it may make your meringue chewy and sticky and not crispy.

I’m using Bunge whipping cream po..You can also use regular all purpose cream like Nestle or Alaska

3 cups heavy cream and 1 cup powdered sugar. You can always lessen the powdered sugar if its too sweet. ❤️😊
