You are right. It does absolutely look like that. I know that was my first impression when I looked at it. But then you taste it. You can taste the 100+ years of the toaster and the 130 years of the vertical grills, the juices steaming back up through the burger as it grills.

I've commented in the past about how bad I wanted to try it. I did, recently. I totally get it from a historical viewpoint, and the vibe is cool. I'm a Chef so I see the big picture usually. It truly was not horrible...but it definitely wasn't good.

I spent 45 minutes on line to get one of these burgers, which I ordered medium rare, and they proceeded to cook to shit. I reordered and got my medium rare burger on white bread and cheese whiz. Completely overhyped, mediocre burger at best. Very bland, needed seasoning, and too pricey for the small pattie you get. I bet this is the original burger in the US, because people have altered the recipe to make them much better over the years!

They have to use spread because their upright broiler stoves can't accommodate slices. Do some research or somehow find and ask a native of the Milford-New Haven Area, (such as myself), before you go trying to talk shit. Seriously, you're not clever. Also, modern tomato ketchup is fucking disgusting and wasn't instantly paired with most things like it is today. Lastly, even The Washington Post has devoted an entire article to how ketchup alters the flavor of burgers.

They just don't serve a very tasty burger. I worked about a 1/4 block away from it and nobody went to it I've never met any resident of the New Haven area that liked it. It is basically a tourist trap. They offer a tasteless burger cooked on an old fashioned machine, served between two slices of white toast. Their claim to fame is they don't offer ketchup which doesn't bother me at all. There are plenty of people that will make a pilgrimage to Pepes, Sallies, etc for pizza and put up with very long lines. I've never met anybody that wanted to go to Louis lunch despite the fact there are never any lines.

I do not get into the toppings you can or cannot have. I just like a medium rare burger( if the meat has never been frozen or it changes the texture when thawed out), if it is good it can be a 1 cut of ground meat or 5 like this place says they use, i'll eat it, and it will be good or it won't, that is what i go by to determine if i will eat there again. Very simple

To Me, It reminds Me of the first burger I ever made (personally if it's not smash style I prefer a medium rare burg). It's absolutely not "the best" if we are being honest. Imagine how much of a game changer this was during the times though. To look at the smash style burgers with brisket/chuck/sirloin blends with toasted potato buns & the sweet/acidic sauce styles to cut through the inherent richness that burgers naturally provide the palette, it really goes to showcases how much we have elevated the burger game. It's fascinating to Me that in regards to any culinary techniques and recipes that exist, that if there is something to be improved upon, human beings will figure it out and inevitably improve it. in regards to food, it is absolutely the best time to be alive.

Real authentic 1895 recipe they got there. Apparently they invented Cheez Whiz and Wonder Bread too... Amazing, who knew? I always thought they arrived around the 1940s. Also no way they'd serve rare meat in the 1890s, it just wouldn't be acceptable.

Burgers don’t need pickles on them either, hot dogs don’t need mustard on it, steaks don’t need salt on them, etc. etc, but WHY would any chef be arrogant enough to not only not offer it, but to go as far as to ask a customer not to add it themselves? They use a sharp cheddar cheese spread, but the real point is that it's not some cheap factory pre-made or frozen meat patty you need to drown in ketchup to give it some kind of taste, but made of 5 different quality beef cuts grinded freshly every morning for that day only and then flame-grilled in these original upright cast Iron broilers from 1898, to ad that fresh flamed-grilled meat flavor.
