Mama's Scrambled Eggs

Using evaporated milk will make scrambled eggs look much more golden.
I used 4 eggs about 1/4 cup evaporated milk and a couple of dashes of salt then cooked slowly in a skillet with the heat on medium low.

    I agree! I'm glad her son is keeping this going. I just found her 6 months ago! I love watching her videos. Her voice is very calming and she has a way of explaining that is easy to understand. Rest in Peace sweet lady.

    I love how Phyllis eats and prepares simple ordinary foods. Nothing wrong with scrambled eggs any time of day for any meal. Eggs are wonderful protein and great for kids and all ages, too. I cook mine over medium low heat in butter, no milk. And use a lot of black pepper and a bit of salt. RIP dear lady. You live on in your son and your videos.

    I'm watching this in February 2020. I also take the white "anchors" out of eggs. They tend to have a "ropey" texture. I'm glad to learn I'm not the only one who does this. I'm also a child of the 50s and 60s. We ate what was served. If we didn't like something, my mother said we needed to find a higher priced boarding house.

    I miss you my friend I never met in person but was blessed to have come into my life while searching for an authentic recipe...I found not only the most authentic recipes but the most honest authentically enchanting sweetest southern belle a lady a friend an instructor a cheerleader a fellow baker a kindred spirit with a use it up wear it out make it do or do without outlook on life, a like mindedness for the never ending hunger to learn to know to research to take on new ventures to dare to step out into the unknown and to never be satisfied with just okay..and never speaking badly about anyone and never forgetting to be a gracious well spoken soft spoken woman God first then family and sadly always putting her own needs last... but even in the last months during chemo and having terrible reactions from it all sweetest fine lady that she was and always will be, she still made a video apologizing even after mr bucky died she still apologized to us all for taking some time to recover from all the things that need to be done when your spouse dies and not one of us was thinking any selfish thoughts only about how she was physically mentally and emotionally getting through it all...we saw so many videos and she was alone so much we heard about visitors and those were scarce and she was alone most of the time...we only chalked it up to her grown children living in another country or possibly working on a ship or in the military or traveling as part of the job. It was the last few years Ms. Phyllie looked so sad. She lost her zip..She still cooked and cleaned and took care of mr bucky. I know she loved her dogs and they never did take that trip they planned due to that storm...i remember the video...and here Ms Phyllis had cooked and had prepared all those meals, and here is this when the stovetop caught fire or went out completely then it rained? Ill look that up..we all enjoyed her video posts...it was always like getting a letter from home and from someone who felt familiar comfortable welcomed and seeing a new posted video felt like Christmas because you just knew Ms Phyllis had not only a recipe or two and a plate full of food or a beautiful tasty dessert she was going to teach us how to prepare...and she would manage to have her humor and funny quick witted remarks tucked in here and there to garnish the story and a sprinkling of her charm over everything always...im so blessed to have been on of the lucky ones who shared comments recipes encouragement love and a sisterly protectiveness regard and respect for her many accomplishments. We could go on and on...but I am so happy I had the honor and pleasure of knowing and admiring Mrs Phyllis Stokes..a God loving woman a sweet soft spoken kind lady who always reflected grace beauty and charm. She taught me how to NOT complain...i never once heard her complain..she may have mentioned a problem but quite briefly and only as to finding or having found a solution. Oh here i go again..when one wants to leave a word about the fine character and integrity of Mrs Phyllis well, there just isnt a pause to search for words there is not enough space on this or any other format...the list of her attributes and the joy she has so freely given to others..endless ..save a place for me at your table Ms Phyllie and when its my time to go please have a slice of your lemon meringue pie and a big ole glass of your sweet tea waiting for me..u r here in my heart always

    Oh my squee, Phyllis! This video brings back memories of my Granny Myrtle! Totally forgot about cleaning the "tails", but love the evap milk reminder; I only buy skim and splurge now and then on a small half and half.     This reminds me of when I was back in music school and on a choir tour where we stayed with host families of the local churches where we performed. I stayed with a southern lady and her husband and she made soft scrambled eggs like Ms. Phyllis makes here. They were so creamy and delicious.

    I am a proud child of the 50s and raised with wonderful Christian parents. My mom cooked with her Grease can clearly marked "Grease" on the stove between all the burners. She whipped up anything in short time. Her biscuits were wonderful and she used Crisco. I never learned to make them like she did even tho I watched her all the time. BUT, I did outdo her cornbread and I think she felt bad watching dad gobble up my cornbread and porkroast. It was kind of funny. Our neighbor kept an industrial size container of Lard under her sink and she used it for her biscuits which she made 3x/day every day. Hers were wonderful as well but she made "Cat Head" style and mom's were the size of your cutter but she used a glass. She whipped them up with her hands, self rising flour, Crisco and buttermilk. They'd be mixed in a jiffy. When I try, I have dough all over my hands and it's a mess. Then when I pull them out of oven, they are not light and they seem dry and tasteless. A real loser. Maybe one day I'll learn. I have to tell you that she said she "Dreamed how to Make Biscuits". One nite she dreamed it and next a.m. she woke and tried it and voila, they were perfect. Perhaps her mom came to her in a dream.:)

    My mon was a short order cook so it was Alice's restaurant we got basically what he ordered for breakfast. It was nothing for her to whip up sausage, eggs & toast for me and oatmeal for my sister. Both my mother and grandmother both always kept a can of bacon grease on the back of the stove. My grandmother would dip her toast in the bacon grease that she just had cooked bacon in instead of using butter lived to be 93 almost 94 years old

    I am a child of the 50s as well, and my mom kept that canister that said "Grease" on the front. She had it on the stove between the burners and kept her drippings of ham, bacon, sausage and whatever else. She added that to beans, and many other things. That is what everyone today says killed off that generation early. I don't concur because I believe all things in moderation. She made biscuits, gravy and eggs, grits, sausage or bacon for all breakfasts. My next door neighbor made biscuits 3x/day for her family and she had a huge container of Lard under her sink that she used for biscuits and I guess everything else. Mom used Crisco for her biscuits. I never learned to make biscuits like mom, tho I watched her many, many times (I am almost 65). I do make better cornbread than she did:) She used to look funny when dad would gobble up my cornbread. I think she was a bit put out. I am so glad to have been a child of the 50s and so blessed to have had God fearing parents and a Christian upbringing.

    I live in Fl, growing up if we had left over grits or rice, I would ask my mom to to put it in the fridge for my breakfast the next morning. She would mix the leftover rice or grits into my scrambled egg. It gives it a another level of taste. My mom was a great cook for someone who never read a cookbook in her life.

    Phyllis, I know I am late watching this video, but I love all your cooking videos. I love the stories you share while you are cooking. Talking about trying a turned over egg at your friend's house for the first time, it is so neat what we discover in other's homes. I thought I hated vegetables when I was little, but while I was at my best friend's house they had steamed broccoli with hollandaise and seeing my friend eat it, I tried it ....and loved it!! I also had sopapillas for the first time at her house and her mom coated them with powdered sugar instead of cinnamon sugar and I thought it was heaven. On another note, I made your Bucky Burgers and my husband and I loved them.....I would have never thought to put a burger on a kaiser roll but it was perfect and now that is the only way I want them.     I love it when you say "we'll talk a little bit". I get comfy and settle in for a Phyllis story! It's so relaxing watching your videos, I prefer them to TV!     Unfortunately I was more of the "Drill Sergeant" which is exactly what my daughter called me. The children were always on the Honor Roll at school and all three children graduated in the top of their class, got a college education and went on to very successful careers. The "Drill Sergeant" here is going to take some credit for that feat.

    Phyllis....sometimes being loving means being tough and having high standards and expectations especially when you know your children are capable of achieving so much. I've watched your video about how you and Mr. Bucky met (what a nice love story) and learned about your very successful children and sadly, your daughter's passing. I am so truly sorry for your heartache. By what you shared, it was clear she was brilliant and very driven and highly motivated. You definitely get to take credit for that, Sargent Stokes! Now, I'm going to be a little tough on you for a minute, but it comes from a place of love and concern. I'm worried about you re-using plastic jugs for your sweet tea. A few years ago I had a life changing experience with early stage uterine cancer (I am fine now don't worry). I learned then that plastic has "estrogenic properties" which means plastic tricks our bodies into thinking it is estrogen. When we use plastic for cooking, drinking and food storage, the estrogenic chemicals leak into our food. This is all microscopic, we cannot see it. My gynaecologist made me promise to go home and through out ALL my plastic and to never, ever re-use plastic water bottles or juice bottles. When you re-use them, the chemical leeching is worse, especially if the contents are hot or the bottle has been heated by leaving it in the car for example. Plastic bottles are not to be re-used. I watched you make sweet tea today and totally relate to your problem finding a good glass pitcher. I am still searching. But please, please stop using that plastic juice container! I didn't say anything earlier, I didn't want to come off like a know-it-all and was contemplating sending you an email but then I saw you had responded to me. I don't want to criticize you at all, I am just concerned for your well being. We women have to be careful with estrogen, it feeds things like breast cancer and endometriosis and I don't want anything terrible to happen to you. Let's both work on finding ourselves a great glass pitcher ASAP! I hope you hear my words with the sentiment intended and are not offended. I am making your sweet tea recipe tonight! Anyway, please consider what I've shared, but know that I won't be upset if I see you continuing to use that plastic jug and I will still watch and appreciate your videos. I am just sharing what I learned and hoping it will help others. Much love and appreciation to you, your friend, Andrea.

    I grew up with chickens and we ate fried or turned over eggs every day for breakfast except on weekends when my sister and I made a huge mess fixing pancakes LOL I haven’t wanted to eat eggs for many years!! You Sweetie just made me starving for a plate of your perfectly cooked scrambled eggs and my grocery list just had evaporated mild added to it!! Thank you so much for the recipe and for bringing up my memories of our watch Rooster Francis who was meaner than a snake and kept everyone at bay. He even pooped our bicycle tires when my brother would use the bike to put it between himself and Francis to get out of the yard. Yes I said he kept everyone at bay! That included us 8 kids!! Wow we had such a great childhood!!

    I really love all your stories about your momma and your life with her in the 50's. Talking about how "of course, in the 50's you ate what was presented to you." I'm a teacher and I'd be hard pressed to show you a dozen six year-olds who stand by that lifestyle, let me tell you..... Hahaha.

    Yes I agree l'm now 70 my mother always added evaporated milk to her eggs. Only time she didn't when she ran out. Love and miss her, so glad you are doing her video ❤️ her.

    I agree, i dont like to give my kids cereal for breakfast either. I like to make em a hearty breakfast. I like that you tell stories about your momma while cooking. My son had to draw a picture of his momma at school and drew me standing in front of the stove cooking. I guess thats how he sees me. Thank you for your videos, i really enjoy them.

    My mother made scrambled eggs that looked like this, they were my favorite but I tried it and they never came out like this! Now I know what they were missing, the canned milk, my mother never told me that!! :) Good memories! My mother has Alzheimer’s and is in a nursing home, she will be 93 in June, I sure do miss her cooking!!

    I wholeheartedly agree with the previous comment, and I love your voice too because it is calm and earnest. I have a stressful day, and I love escaping into your ordered, hard-working, but calm life style. Your kids are so blessed. And I had NO idea that eggs taste better by cooking them at a lower heat!!! Thank you for all the tips you give. And also, I like the way you arrange your plates with the little cups on them! I wish I would have found you when I was younger and had family about.     Mrs. Stokes all of your videos cheer me up and I learn so much from them. My Grandma made eggs this way and they were always fluffy and perfectly cooked through with amazing flavor.I watch your videos everyday. I am praying everyday that your health improves and that you become cancer free. Don't worry about making more cooking videos, just take care of yourself first.     Hi Mrs..Phyllis! I eat scrambled eggs every morning with a piece of toast and a glass of milk or orange juice. My mom says cereal is unhealthy and I agree. She also says it doesn't stick with you through out the day until lunch time and I also agree. We actually don't even keep cereal in our house. The only time I don't have eggs for breakfast is on the weekends, my mom makes pancakes, and some mornings I have a smoothie. Are you and Mr. Bucky in the path of Hurricane Matthew? I have been worrying about that today and prayed for you guys this morning. I know that your governor issued a state of emergency, and that worries me for people over 60 who live by themselves and cant evacuate. Lets just pray its not as bad as the weatherman and woman are saying its going to be. Thanks, Darren

    Scrambled eggs are the very first thing I taught my son and then each of my three grandchildren to cook for themselves. I heard them talking about it once and my grandson said, "She wants to be sure we won't starve." LOL

    Just FYI, I went to google and found this: "The white stuff is CHALAZA. Ropey strands of egg white that anchor the yolk in place in the center of the thick white. They are neither imperfections nor beginning embryos. The more prominent the chalazae, the fresher the egg." So now we know! lol

    Hello Ms. Phyllis, your Momma must have been a very robust woman to be doing all she did for your family. Hopefully our Lord gave your Momma and Daddy a good long life on this Earth.     Ha ha ha ha Love this! I never realized that I raised my kids like I was raised until I heard u talk about having to eat what was put in front of u! If my kids wouldn't eat their dinner I covered it up, put it in the fridge and it appeared the next night! Cereal was dessert for the kids sometimes since it is full of sugar!

Does anyone else have trouble getting that white off of the egg yolk. It's like I need a fork with closer tines but hers look like mine.

    I use pet can milk in mash potatoes only. It’s so good ! I know i would love those eggs because i love that can cream. I use that on many things. Thanks Phillis !

    Phyllis I thought that I was the only one that took out the white parts. I grew up in the 70' and 80s, we only ate out maybe once a month as a special occasion, and we grew up with from scratch cooking. Thank you for your vidoes.

    I keep evaporated milk for those times when we run low, or are out of fresh. Its come in handy twice recently. Its a great standby. I use it in mashed potato, oatmeal, eggs, gravy, meatloaf, I use it in anything when I need to and don't have fresh. I never realized that about the color in eggs tho. You keep teaching me and I will be your sponge. I sure hope my commenting on this marathon I'm doing is not bothering you. I just yap on like we are chatting and I actually know you.     I've never had rice with eggs. I've always had potatoes with eggs. Fried or mashed. I'm looking forward to trying this. Again, thank you for sharing with us. Especially us younger folks who are trying to learn!
