Nasi Goreng Kampung gotta be one of Malaysia’s most underrated all-time comfort foods. It’s cheap to make, fuss-free, and just a whole lot of flavor that hits all the right spots.
I’ve shared many dishes with you all that are an inspiration from my mom but today I’m going to share with you something from my beloved wife!! She makes the BEST Nasi Goreng Kampung, and I wanna share it with you guys.
Best made with leftover rice, so whenever you’re cooking up rice for a meal always cook some extra so that you’ve got rice ready for a good fried rice whenever.
Ingredients:
Anchovies - 100gm
Chicken Breast - 180gm
Kangkung - 250gm
Shallots - 4 nos
Garlic - 6 cloves
Chilli - 6 nos
Belacan/ Shrimp Paste - 30gm
Rice - 2 cups
Seasoning fish sauce
Dressing:
Cucumber
Chilli
Fried egg

    Ni cara masakan kedai tomyam punya nasik goreng kampung. Yang asli kami tak pakai sos kicap bagai tu dan kami pakai ikan bilis yang biasa bukan kecik2 gitu takde rasa . Belacan pun kami tak bubuh.

    Ready cook rice is good to stir fried immediately. Control water ration. Standard 1 cup rice : 1 cup water (rice will be firm enough to stir fried immediately) 30 to 40 mins rice cooker, steam 50 min. No need overnight fridge. Big Wok Stir fried rice for 50 plates is possible as delicious. I Master it several years cooking small batch, then big batch. Get Your Cooking Technique Right. A good fried rice is about getting your ingredients right. Flavour: 1 serving rice (1 teaspoon fried garlic) Ingredients (Pan stir fried diced crispy chinese red sausage (set aside), french beans, big onions, greens onion, fresh shitake mushrooms, prawns meat). Basic Seasoning (oyster sauce, light soy sauce-pour side wok, small dash maggi sauce, dash of white pepper powder-maggi ajinomoto brand), garlic mince. Eggs. Where is the eggs when you stir fried the rice. Use the wok metal laddle. Not the wood type. Use French beans, shitake or brown shimeiji mushrooms for the fried rice. Save the water spinach to stir fried separate with sambal chilli you made, anchovies oil, oyster sauce, light soy sauce & 1 tsp sugar. Add slices big onion & garlic mince. Separate vegetables dish will goes well with fried rice eat together.

    Chef always use excuses to put his favorite ingredients. lol but i prefer thick anchovies, cause the flesh is more flat and give a nice texture when bite. Small anchovies is good but feel like eating a ubat stepler.
