Making Yummy flavorful vegetarian/vegan Kimchi

A vegetarian/vegan delicious kimchi recipe.
Ingredients:
1 head of Nappa Cabbage
1 bunch of Green Onions/Scallions
1 bunch of Chinese Chives (optional)
2 Carrots
1 small to medium size Daikon or Korean radish
4 pieces of Shitake Mushrooms
A few pieces of Kelp (can get from an Asian supermarket or amazon)
2 tablespoon Rice Powder
5 tablespoons of Coarse Salt
1/2 Onion
5 cloves of Garlic
1 small piece Ginger
1 Apple
1/2 cup of Water
1/2 cup of Korean Red Pepper Powder
Method:
1. Cut the cabbage into bite size pieces
2. Place them in a bowl and add 3 tablespoons of coarse salt, mix, cover, and let it sit for 20 minutes. After 20 minutes, mix again, and cover for another 15 minutes. Rinse and strain the cabbage.
3. Wash and cut the green onions and Chinese chives into strips (julienne cut). Place in a bowl.
4. Peel and wash the carrots and daikon and cut them into strips (julienne cut). Place the cut daikon and carrots in a bowl. Add 1 tablespoon of coarse salt to the carrots and daikon, mix, and set aside.
5. Chop the shitake mushrooms into bite size pieces. Place the chopped up shitake mushrooms and the pieces of kelp into a pan with 1 1/2 cups of water to boil. Once boiled, turn down the heat and let simmer for 10 minutes. Take out the mushrooms and kelp into a bowl and set aside leaving the liquid in the pan. Add 2 tablespoons of rice powder to the liquid in the pan. Stir to mix and let it boil to a thick paste and then set aside to cool. ( I missed filming this last part in the video)
6. Put the onion, garlic, ginger, apple, water and the cooked mushrooms and kelp in a blender. Blend to a fine paste consistency.
7. Place the blended fine paste into the bowl with the carrots and daikon. Add the Chinese chives and green onions. Add the Korean red pepper powder and mix well.
8. Add the above mixture to the cabbage and mix well. Taste and season as needed.
9. Put in a sealed container. Leave the container out in room temperature for a day and then place it in the refrigerator.
10. Enjoy!
