Here’s a relaxing video I filmed in Trinidad last April during my short visit-on the making of mango chow -as it’s done in Trinidad. Mangoes (and/or other ripe or semi ripe) fruits are picked straight off the tree to make this refreshing and most times extra spicy raw fruit snack. In the villages, every ‘lime’ / hangout includes some variation of chow.
Culantro, also known as bandhania, shadow Beni is the main herb used in this. Little do we know that this herb boasts many benefits-it’s rich in calcium and contains iron, riboflavin and carotene. Culantro also has medicinal value and may combat the flu, diabetes, constipation and fevers (according to Purdue University). It’s not cilantro but that might be the next best substitute if Culantro is not available in your country
The main ingredients for the chow -garlic, hot pepper and bandhania can be chopped with a knife, food processor, mortar and pestle or the traditional sil and lorha.
My friend/ neighbor in the video happily volunteered to make chow for me, so she first takes me on a tour of her grandpa’s lush ‘heavenly’ garden (we got special permission 😀). The first challenge was passing a house with a not so happy doggie who doesn’t like visitors. I’ve had bad experiences with dogs chasing me back home so I am always extra cautious! Who can relate?
She then shows off her excellent knife skills-she’s been making chow since she was 9!

In my country Panama is just like in Trinidad, we have many different types of mangoes from the pinaple flavor, papaya and many others. The plums we call them ciruelas. This video bring a lot of beautiful memories.

I like adding a little bit of vinegar and water for some sauce and a small bit of curry. It adds a background flavor. My mouth is watering right now.

Hi Ria she’s very good i still makes chow for my children i started to learn to cook at the age of 7 years old i just love cooking i make chow just like her but I’ll grind the garlic and the other things I also put lime i don’t put sugar enjoy the weekend bye.
