Making Flavorful Pancit Molo
400g ground pork
100g shrimp
1 medium onion (minced)
4 cloves garlic (minced)
spring onions, sliced
1 egg
1 tbsp flour
1 tbsp soy sauce
2 tbsp oyster sauce
1/2 tsp ground white pepper
1/2 tsp salt
1 tsp sugar
wonton wrappers
1 liter chicken broth
1 cup shredded chicken

1. Slice a few sheets of wonton wrappers into 1/2 inch strips. Set aside.
2. Mince the onion, garlic, and the de-shelled shrimp. Mix into the ground pork with the spring onions.
3. Add soy sauce, oyster sauce, salt, ground pepper, sugar, flour, and egg. Mix well.
4. Add about a tsp of the mixture and wrap with a sheet of wonton. Use water to stick the wonton wrapper close.
5. In a deep pot, sauté some minced garlic and onions. Add in the shredded chicken and season with salt and pepper, then cook for about two minutes. Add the chicken broth and season as needed, then bring to a boil.
6. Add the wonton in batches, and the wonton strips in quick small batches to avoid making them stick together.
7. Cook over medium heat for about 30 minutes, or until the wrapper turns from yellowish color to soft and white.
8. Serve with freshly-sliced spring onions and crispy garlic.
