Making Flavorful Ensaymada

Ensaymada
1 cup warm milk
2 eggs
3 tbsp sugar
6g yeast
3.5 cups bread flour
1 tsp salt
1/4 cup unsalted butter
1/4 softened butter
granulated sugar
1. Mix warm milk, 1 whole egg, and 1 egg yolk (set aside whites of one egg), sugar, and yeast. Set aside, covered with cloth, for about 7 minutes to allow the yeast to bloom.
2. Add flour and salt, then mix until dough roughly forms. Add butter and knead dough around 7 minutes.
3. Place in a lightly oiled bowl and cover with cling wrap. Cover for 40 minutes, or until dough doubles in size.
4. Press on the dough to release air. Transfer to work surface and divide into 12 equal pieces.
5. Flatten a portion then roll thinly, then form into a spiral shape. Set on a backing tray and cover with cloth for about 30 minutes.
6. Use egg white set aside earlier to coat the top of each portion. Bake at 180°C for 20-25 minutes.
7. Remove from the oven and let cool for about 10 minutes. Once cooled down enough, brush with the softened butter, then dredge in the granulated sugar.
