    I made these tonight, and they were SO GOOD! I used ground turkey, tofu, minced mushrooms and the other ingredients she specified, and cooked them the way she cooked them. I've never made dumplings before, so I did use store-bought dumpling wrappers, and they were still delicious. My husband said they were gourmet! 😍 Do yourself a favor and make these dumplings. Your belly will thank you. 🥰

    I made these today and they were absolutely FIRE!!!!! I didn’t have Kimchi or Ramps but I used Cilantro and Cremini Mushrooms in the stuffing and left out the Tofu/Ricotta. I also didn’t let the dough rest for an hour, I let it rest for like 20 min and it was perfect. The kids couldn’t wait to eat. But this recipe is absolutely beautiful!

    Ground pork and ground shrimp was my mom's filling base. Finely diced water chestnuts provided the crispy crunch in the filling, and she liked to use white pepper instead of black pepper. Shallots or spring onions are options for the filling as well as the dipping sauce.

    Question: Can you reroll the scraps from when you cut the dough into circles? I've made dumplings before but I've always rolled them out individually because I think if I try to reroll them, they won't stick back together anymore because of the bench flour.

    As someone who needs a recipe when I cook, it would be SUPES HELPFUL to have the actual recipes for these amazing dishes linked in the description box. Buh-LIEVE me when I say, nobody needs me wingin' it when I cook. Over salting LIT-trally everything is my super power.

    I adore dumplings, but I have issues with wheat. I tried with rice paper once. Messy but good. I wonder if I could try to make the dough with spelt..and whitout pasta attachment.

    Can you tell me your stand mixer model? It’s on the bottom of the unit's base and back. I heard that if I don’t buy one that is strong enough even at 2 speed it make break faster.

    Yay Esther...I've missed seeing your equipment videos. But, boy howdy, those dumplings look delicious! And...I have NONE of those ingredients at home. Well, I take it back...I have water, AP flour, salt, oil and cornstarch. That would make for one boring, empty dumpling.

    @Emily I always thought of ramps as being a wild food that you forage for in the woods. Never thought of anyone actually growing and selling it. 8-)

    Ji F. You can’t grow it. But in the northern part of the northern hemisphere, it grows wild everywhere, and a lot of foragers collect it and sell it on farmer’s markets, and directly to restaurants. It’s absolutely delicious.

    Did Ester make two batches? The gloves were on and off between cuts. Nvm saw the ending, she didn’t record for part of it and needed to reenact without gloves.

    You portion the dough into a log and cut that into portions. Roll those into rounds and use a rolling pin to create your round wrappers.

    If you use tofu, I'm guessing you'd use soft tofu? Or is something firmer better? Do you want to squeeze all the moisture out of the tofu first, or straight out of the package is fine? Thanks!

    Hi I’m not Esther but my mom would use regular/firm or soft and then squeeze out the moisture/water using a cheese cloth. Definitely not silken or anything too soft bc it’s too wet. The consistency should look like the ricotta she tossed in.

    She showed them all at first as she was gathering the seasonings and then took the glove off once she started adding them. They just cut it to show her adding them immediately after introducing them.

    Fish sauce is fermented anchovy extract. It’s not necessary and salt is good enough. Cheese is not necessary either.

    Yeah it's hard to find in a non-Muslim majority country… but if you want to make it by yourself, simply find any dumpling recipe, switch the pork with halal meat (beef, chicken, seafood), omit any alcohol-based seasoning, and you'll have a halal dumpling recipe~

    @@KG59SM halal is a category in Islam regarding food and beverages… for food, we are not allowed to eat pork, animals with poison and/or claws/talons, reptiles & amphibians, blood, and carcasses… Cattles that are allowed to be eaten such as cow, buffalo, camel, lamb, goat + poultry has to be slaughtered in the name of Allah using a "humane" method (using a very sharp knife, cuts cleanly in the neck in 1 strike over the the major blood vessels, trachea, and esophagus) to ensure they die as quick and as painless as possible… While every sea creature and plants are halal to eat… as for beverages we are not allowed to drink alcohol (which includes using alcohol in cooking)…
