Making Chinese Egg Noodles From Scratch At Home

At first, it kind of intimidating making Chinese egg noodles from scratch at home. The same goes for pasta and bread. But I am glad I took that first step. I made it once, twice and now, all the time. It's easy once you get the hang of it and it's so much better than the Chinese egg noodles from the supermarket shelves.
All you need are 3 basic ingredients and my guests are always impressed that the noodles they are eating are homemade.
The next video ( • Sauce for Egg Noodles ... ) shows you how you can make a very simple egg noodle sauce, using what you already have in your pantry. Also, a suggested way to dress up your noodles using leftovers. I do this all the time!
Ingredients:
125g egg + water
250g bread flour

    A dough mixer is ideal for tough doughs.... much stronger than a standard stand mixer.

    Thanks for this recipe. I tried it, followed the same amount and timing exactly and it worked. After boiling the noodles for 3 minutes, it is springy and hard. How do I get a slightly softer noodle?

    Boil it for a longer time. Try adding a minute to it and adjust further if needed. Hope this helps 😊

    it usually takes 2-3 minutes to cook. Try a piece of noodle to make sure its done before removing it from the boiling water.😀
