Making Black Urad Dhal and Yellow potato fry - colourful, delicious and nutritious vegetarian meal!

Today we decided to make a combination meal of yellow potato fry and black urad dhal, served with rice. Yellow potato fry is a family favourite, especially when we got soft cooking potatoes! Black Urad dhal is usually made when we do prayer but can also be eaten on its own as well. More traditional meal but definitely a delicious vegetarian option.
Ingredients:
Black Dhal
1 cup black urad dhal soaked overnight
1 level tbs rough salt
1 heaped tbs vegetable ghee
1/4 cup oil
1 1/2 onion, sliced
1 tsp Jeera (cumin) seeds
4 small dried chillies
a few sprigs of thyme
3 small tomatoes grated
12 cloves of garlic
3 green chillies, split
Spring onion and dhania to garnish
Yellow potatoes
7 potatoes peeled and sliced (~1kg)
1 1/2 onions, sliced
1/2 cup oil
3 dried chillies
3 green chillies, split
1/2 tsp hurdee (tumeric) powder
1/2 tsp mustard seeds
1 level tbs fine salt
dhania (coriander) to garnish
Served with rice and can be accompanied by pickles or nuts chutney!

    Looks tasty. I love potatoes and dal. Is there a reason why you try to remove the skins? Whenever I've soaked black dal it always seems to turn a slight green color.

    I take out the skins that are loose because when I boil the dhal these loose skins will float up to the surface and doesn't look that good.

    We have a lot of thyme and mint in our garden and we often use it in our curries.
