Making a set of 3 kitchen knives from 80CrV2 steel FULL KNIFE BUILD Forging, Heat Treat, Sharpening

In this video I forged out a set of 3 kitchen knives; a 9” chef knife, an 8” filet knife, and a smaller 7” chef knife. The blades were all forged from 80CrV2 steel. I ran 3 normalization cycles at 1650F, 1500F, and 1400F. I quenched the blades at 1525F in Parks AAA quench oil that was heated to approximately 120F. I tempered the two chef knives at 400F to achieve a hardness of around 61 Rockwell. I tempered the filet knife at 425F to achieve a hardness of around 58 - 59 Rockwell. I ground the bevels on each knife up to 220-grit on the 2x72 belt grinder, and then hand sanded from 120-grit to 400-grit.
I attached stabilized maple burl and blue epoxy handles with white G10 liners. I secured the handles with (6) 3mm stainless steel handle pins. I shaped the handles on the bandsaw and grinder before hand sanding them to 600-grit. I polished the handles on a buffing wheel with pink rouge, and then applied 3 coats of Odie’s Oil finish. I allowed for at least 12 hours of cure time between coats.
I sharpened the knives on diamond stones, and progressed through a 300-grit, 1200-grit, and 3000-grit stone. I stropped the knives on a double sided leather strop loaded with 5 micron diamond paste on one side and 3.5 micron diamond paste on the other.

    Hey David…great knife set! I’m going to order a set of the diamond stones and wanted to see if you thought there was any reason to go lower than 300 grit for setting initial secondary bevels? It’s probably not necessary on culinary blades like these with almost full flat grinds..just wondering about thicker blades. Ultra sharp doesn’t make anything more coarse but DMT does have a 120 grit diamond stone. Just wanted your opinion on whether the lower grit stone was worth the extra $85 or if 300 sets bevels quick enough on thicker blades?

    Hey, thanks for watching! I personally don't think there's much of a need to go more coarse than 300-grit. I've sharpened plenty of thicker knives like cleavers and bowies starting with the 300-grit stone just fine. You might save yourself a minute or two by starting with a 120-grit stone, so if that's worth the cost then I'd say go for it. If someone gave me a 120-grit stone I'd certainly use it, but I wouldn't buy one myself.
