It’s another beautiful day and one of the questions I get in tamale video is what is a good substitute for lard???? Well today I share with you how to make them without using any lard , now let me tell you I experienced making tamales with both shortening and oils and vegetable shortening took the win, from the feel, touch and taste😅 and the masa floating is proof of the perfect consistency ☺️ of course lard is in my opinion bette but vegetable shortening is the best substitute. ✅want the filling to be more saucy, add more broth to your salsa
✅ don’t have a instant pot ? No problem make them in stovetop, over medium low heat steam for 1 hour and 1/2
✅a stand mixer is the easiest and fastest way to way to make the perfect masa but if you don’t have one don’t worry you can still master it using a hand mixer or your hands(that’s how my mom makes them still 😅) for me, the less time I spent on it the better 😃
Ingredients: 28 pre soaked corn husks
For the chicken:
5 lbs split chicken breast with rib
1 onion
1 head of garlic
3 bay leaves
1 Anaheim pepper
10 cups of water
1 tbsp lawry’s garlic salt
Coarse salt I used 3 tbsp
For the salsa verde
1/2 lb tomatillo is used milpero
Chile Serrano **depending on how spicy you want your salsa or you can use jalapeños
(Optional) Chile árbol
1/2 onion
4 garlic cloves
Handful of cilantro
Handful of spinach
1/2 tsp ground cumin
1/2 tsp peppercorn
1/2 tsp oregano
3 all spice berries
3 whole cloves
For the masa
6 cups instant corn masa for tamales( Maseca)
1 cup of the salsa verde
6 1/2 cups chicken broth
2 1/4 cups vegetable shortening
5 tsp baking powder
Salt to taste I used 2 tsp
1 serving of love💕

White boy from Kansas here, made these last week and they were absolutely delicious. I used LARD, my hispanic co-workers told me best tamales ever, especially liked the masa. This was my first time ever in my 57 years making tamales, I was raised by my white mom and Mexican step-father, mom made tamales and all Mexican food constantly. Today I'm making Claudia's "Feed a family of 6 tamales" using pork, and adding a cup of green chile salsa to the masa. True..traditionally they are made using lard but people can substitute non salted butter, cream cheese but just won't be the same.

Same. We are Messianic Jew and don’t eat pork. I substitute pork with beef in every recipe and honestly the food tastes better. I also use Crisco Vegetable shortening instead of lard.

Vegetable shortening and all vegetable oils are so bad for you! Animal fat is now known to be ok, butter over margarine. I’ll make mine like my GMa taught me with Manteca-lard! Going to try your recipe! ❤

Lard is literally 1 ingredient pig fat, veg oil is Industrial heavy equiptment lubricant......I made my own Lard recently when we got a huge Boston butt, it was like 4 cups of Lard for penny's and its snow white clean delicious healthy Lard. People shld really make their own it's literally 1 ingredient and so healthy and what our ancestors really used, not store Lard filled with tons of other crap.

My wife is a vegetarian, so I've had to adjust how I make tamales. I use veg oil/shortening and veg broth now so I don't have to make two separate batches of masa. Especially since I mix the masa by hand.

Honestly i made with both and theres not much of a difference, i just think if u got lard from your carnitas oil than it gives alot of flavor but the plain lard from store same taste

These are my favorite type of tamales and we always use vegetable shortening since we have pork allergies in my house and they always come out delicious. I will have to get one of those intant pots to cut down on time. Great video and happy Friday!!!!

I made the beef recipe with beef tallow cause I don’t eat pork and they were so bomb I’m def trying this one I also have the insta pot max 6qt so I had to make some changes and cook longer but the meat flavor was on point!

Hi Claudia, I made your red beef instant pot tamales for Thanksgiving and it turned out amazing! First time I ever made tamales. My only question is, if your masa mix doesn't float how do you fix it? Mine didn't float but it turned out good anyways haha. Thanks for the great recipes!

I think if your masa doesn't float, it needs to be beatened in your mixer longer

Awe I’m so glad you enjoyed them ☺️♥️ if your masa don’t float could be 1- it needs to be mixed linger( the mixing process is to create air on the masa this makes it light and fluffy) 2- it needs more fat but if you using the ingredients in recipe this can not be it so it could probably be 3- needs more liquid, I would add 1 tbsp of broth/water then mix for 3 minutes test again but careful because of course you do not want your masa to be runny, I know altitude and weather has alot to do with how much liquid your masa can take so just trust the process and don’t get frustrated in the process ☺️ whenever you feel like after mixing for 20 minutes your masa is not where it supposed to be at , you can always send me a picture or video if your masa and I will help you right away ☺️ the taste is going to be delicious but the texture is different 😅
