Start with 4 or 5 long potatoes
Cut of the ends and cut off the sides to make the potatoes
square but long. Cut the potato in slices about 1/8 inch thick
then lay those slices flat and cut strips the same thickness
so your fries are the same size as McDonald's.
Soak in cold water for 5 minutes then drain on a paper towel.
In a pot put enough water to cover the fries when laid out in
a big flat dish. Stir in corn syrup and sugar as the water comes
to a boil. I used 1/2 cup corn syrup and 1/2 cup white sugar for 12 cups of water. (adjust accordingly) Once the sugar is dissolved and
the water reaches a boil "turn off the heat" and drop in the fries.
Let them soak for 10 minutes then drain on paper towels.
Now place the fries in the freezer for 20 minutes.
Heat your oil to 350 degrees. (I used canola oil) drop in the fries
and deep fry them for 2 minutes only. Put then on a tray and let cool for 10 minutes. Drop them back in the oil for 7 minutes.
When they come out of the fryer lay the fries out and dust them with salt. Toss then a bit... and Enjoy!

    As I watched this video,I was thinking,this is the best and closest way to make fries exactly like McDonald's do.Maybe his are even better.I was quite sad when I read your comment and learned of his passing. My first time to see him too.I agree with you ,he sure did enjoy his work.Did it like a boss.May he rest in Peace.I will use his recipe in tribute to him.

    Love this Guy! My aunt Beth worked at a McDonald's in San Bernardino in the late 60's & early 70's and she stated back them they added "beef flavoring" when frying and what they cooked them in was actually "Lard" at that time....we tried her reflection of the past recipe a couple years ago and they were absolutely "Dynomite"! You may have to look a little harder to find lard nowadays, but it's readily available in the Mexican supermarkets or meat markets. It's also a lot healthier than these "fake fat" oils the FDA has put over on us over the years. We now only cook in lard and my cholesterol has went from well over 250 down to around 130-145, so don't believe the hype about the fake fats! Bon Appetite!

    @@danielgodfrey4415 I do too, but only bacon from unprocessed pork bellies that I cut myself. The packaged bacon is full of chemical preservatives and other crap.

    Check your supermarket for Morrells lard. It's in the butter section. It's the best.

    Thank you Steve and Sheila for teaching me how to make McDonald’s fries!! I made them tonight and all my boys & husband LOVED them! Wow!!! We couldn’t believe how much they really tasted like McDonald’s fries 🍟 Thanks again! I just recently learned recently that Steve has passed away (tbh I just found this channel a few weeks ago) and I am so very sorry to all of his family, friends, loved ones and to you - Sheila. One thing I love about watching his videos is how he talks to and about you - Sheila, I know he loves you so very much, I can hear it in his voice. My heart breaks for all of you 😢

    Finally...someone actually uses sugar in making McDonald's fried. I worked at one MANY years ago and knew they coated the fries with a sugar mixture and no one before now even thought of using it. I will definitely be trying this out soon. Thanks.

    My sister just found this channel for me yesterday. My Mom recently passed away earlier this month (March 2021), so I've taken over the family cooking. My sister finds me recipes to add to my collection regularly too. This was one of them. RIP, good sir. This has really been a very sad month. I've subscribed to the channel as of now.

    The best fries I ever had in my life were in a restaurant I worked in as a teen. They peeled the potatoes, sliced them with a potato slicer, then let them sit in the refrigerator overnight uncovered. When they took them out the next day they were slightly brown. They were then deep-fried. The chef told me that when you let them sit and brown overnight it brings all the sugar to the surface. They were the best fries I ever ate in my life. I understand that Nathans used to do this with their fries years ago, before they processed them in a plant and froze them.

    I thought about it and figured I’d add two things, try frying these fries in beef tallow, which is originally how McD’s did it way back or, if you’ve got a spare 30$ lying around, try duck fat

    Hello "Shot Gun Red Grill Meister", I just made the McDonald's French Fries, literally right now and they are all gone. My Family LOVED them!!!     I've been water-soaking and oil-blanching my fries for a while, that's definitely the way to go. Don't think I'd be dedicated enough to McD's to go the extra mile with the sweetened water soak. Beautiful work!

    This is another great recipe from the master chef himself!! I made these fries tonight. I followed the instructions and they turned out PERFECT! I am amazed at how good they are. I actually made 7 potatoes instead of Steve's 4. I wanted extra. It made the equivelant of about 6 or 7 large fries from McD's. They cost around $5 each. I made 6 or 7 for about $6 total. Pretty good if you ask me. And hey.... would it have been way easier and faster to simply go to my McDonalds and just go in the drive thru and buy 7 large fries? Well of course. But that takes all the fun out of it. I love cooking for my family. I'm always trying new recipes. It's a labor of love, that's for sure. We don't cook because we have to. We do it because we love to! Thank you so much for such a fantastic recipe. Will definitely continue making in the future. God Bless!❤

    Wow, that is just fantastic! Here I am, drunk across the Atlantic and watches this video. The youtube algorithm once again gives something truly genuine. The one thing I love about this guy is how he takes care of his ingredients and uses his knife with such care and control and not for a moment I'm concerned of him chopping of a finger or making a mess. True control, love that. This guy could be making tutorials of making grandiose dishes from all over the world but instead he makes tutorials of fast food "junk". But the energy and how he truly explains to the audience in what way he loves this type of food is captivating. Inspirational in a way. Follow this guy´s energy in the field that you love and you will probable come far. Maybe not to the top but really close to it. Damn, this really made this night worth it. Thank you.

    I worked at mikey D's back in the 70's. When you do the ice bath add the sugar then. Then you can skip the hot bath. No freezer, Everything else is spot on.

    @luckyshow98 Yes, All Meat was better quality back in the 80s, 70s, 60s, and before that! And McDonald's and most refused Healthy BEEF TALLOW to fry in and that's why they tasted soooo good. Now they use disgusting unhealthy oils and artificial chemicals

    Fascinating! Saving this recipe for the next time I make home fries. Malcolm Gladwell did a nice piece on how McDonald's fries used to taste even better than they do now, when they fried them in beef tallow. Of course, the twist is that beef tallow was actually less harmful than the linoleic acid-filled vegetable oils they now use.

    Amazing just finished eating them. I Don't know how I ended up here, but as we're in lockdown and I haven't had a takeaway for weeks I tried this, and I'm terrible in the kitchen.     We made these last night. Substituted pure maple syrup since we didn’t have corn, and they still tasted like McDonald’s! You only tasted the maple flavor if you didn’t use ketchup, and it was actually really good still :) thanks for this!

    I thought the sugar/syrup stage was a bit crazy, but decided on blanching the potatoes in boiling water with a teaspoon of golden syrup (partially inverted syrup) and a teaspoon of salt. They cooked for around three minutes, then I took them out. First fry for ten minutes at 150 celsius, then a final fry at 190 celsius until they were golden. Absolutely perfect. Not sure exactly what the sugar solution did, but they stayed crispy even after they had cooled down. Thanks for your advice and tips! I think I have cracked it thanks to your advice! Awesome, Shotgun Red! (such a cool name, I wonder what inspired that!).

    Amazing technique and video! I will be using your technique! This last week, I decided to try to make fries on my own and I instinctively cut the fries small like you did. The first time, made them crispy and the second go they came out absolutely perfect. There is something about homemade fries!!!! After making them from home, I can now get my fix by cooking a batch at home!

    These fries are superb, I had to adjust the recipe slightly as we don't have corn syrup in the UK. My grandchildren live 40 miles from their nearest McDs so this is going to be a treat on my next visit once our lockdown is lifted. Thank you for sharing

    A couple of kitchen items you could use to make this go quicker: an adjustable mandolin slicer and a salad spinner. The slicer allows me to get the perfect thickness consistently and quickly. The salad spinner allows me to dry the potatoes quickly.

    I make a big batch at a time and freeze them after the first 2 minute blanch fry. It works out great.

    I have been making French fries for a long time and I watched this video and decided to try it out. I will say, you nailed it! These fries were exactly like you described. No ketchup needed. They are worth the effort. All I would suggest is that you deep fry them in lard. They were amazing. Thank you for the video.

    Great video. The real trick though is to never throw out your oil. I've been using our family oil, passed down to me from my mother, who received it from her mother and so on. Several generations of fry fat in every batch gives 'em that depth of flavor you just can't get elsewhere.

    They used to call small fries like this shoestring potatoes....McDonalds fries are the best for about 10 minutes after you get them, and then they degrade rapidly as they cool

    That's very odd... I have never in my life heard of anyone calling a fry as large as a Mcdonalds fry, a "shoestring" fry. I have only ever heard of fries about a quarter to maybe one-third of that size being called "shoestring" fries. Can you describe when and where people called fries as big as Mcdonald's fries "shoestring" fries... I'd like to look into that matter, and why it changed.

    I remember seeing this video ages ago but I never got around to making these. I just found this again and made them and boy are they amazing! I was so heartbroken to hear the news about Steve. I remember when I first saw him I just instantly loved him, he seemed like such a perfect, sweet guy, who loved his wife so dearly. I’m terribly sorry for your loss.

    Justin, there is a machine for making Macdonald french fries is called a french fry cutter. If you put the potatoes through the largest cutter then cut them into quarters you will get Macdonald's size french fries. It'll speed up the cutting time and it'll give you a more consistent sized french fry.
