Make Lina's pasta with sausage and peas, two ways! | Pasta Grannies

Lina shares her family recipe for pasta with a pork sausagemeat and pea sauce. She shows how to make two different pasta shapes, both of them easy, and both are good with this sugo. Strichetti, a butterfly shape, is slightly quicker to make than the 'ngana caplet, the dialect name for finti cappelletti, empty cappelletti. It's a pretty pasta to make! Lina says they look like cats ears. For her sauce, you'll need:
2 small or 1 large onion, 2 celery sticks, one carrot, diced finely
2 tablespoons olive oil
3 large Italian sausages, 100% meat, no rusk, crumbled
1 glass (around 100ml) white wine
400ml tomato passata
250g peas
freshly ground black pepper if your sausages are plain
salt (the quantity depends on the saltiness of your sausages)

    @@Thorvard101 I'm Australian born of Italian heritage (probably same age as her daughters) and my sisters and I learnt how to make pasta and the next generation, our own kids in their 20s and 30s have also learnt. We get together on occasion and make gnocchi, ravioli, tagliatelle etc. Great fun and tradition and our Italian heritage lives on.

    I tried making homemade pasta by hand for the first time since I was inspired by these grannies and they certainly make it look easier than it seems. It made me exhausted by the time I'm done. I'm a young adult and these old ladies are stronger than me.

    Starting back in the 80', cable cooking channels have shown thousands of episodes about making pasta. Can't remember ever seeing the method of stretching the dough by wrapping it around the rolling pin as in this video and so many others on your channel. I 'm always filled with awe when I watch this incredible skill which so many Italian home cooks have mastered.

    Yes, it's amazing and they develop an incredible "feel" for the thinness of the pasta that way. If you watch the Chinese videos making noodles, frequently they do the same thing, stretching the dough wrapping it around the rolling pin. I'm half Chinese/half Caucasian, married to an Italian, and we always used to joke with my Chinese mother that Marco Polo stole the idea of pasta from China LOL.

    This particular granny reminds me of my maternal grandmother for some reason. It is her casual demeanor and the story telling of her family, I love that. We have to roots in Italy but I like to see these videos so much and enjoy that they are filmed in the homes and feel so comfortable as if I am with the family. These are great documentation and so educational.

    Growing up my best friends father was Italian. We’d stay there overnight on Saturdays. You’d wake up Sunday morning by the smell of sauces, cheeses and pasta. His dad would make 6 or 7 different pasta dishes and lay out the table like a buffet. It’s where I fell in love with Italian cooking. What I would do to learn from one of the ladies from Lina’s generation. Food for the soul. It makes me happy even thinking about cooking pasta. No cuisine touches it for me. Great KZread CHANNEL

    @@pastagrannies Wow, that's excellent news. Your first book was one of the game changers for me in my cookery book collection. Got me making consistently good pasta in a very short time and expanded my recipe repertoire by a good margin. So I'll look forward to the next one. Could I be cheeky & ask a question? Is it possible to make good pasta from roast chestnuts/chestnut flour? I've a pile of chestnuts & wondered about making some pasta from it rather than just use it as a filling.     @@Getpojke no it's not cheeky 😀 chestnuts don't have any gluten so you have to mix chestnut flour with wheat flour to make pasta. The larger the percentage, the more crumbly the dough gets. Chestnut flour goes off very quickly and it's a good idea to freeze it if you are not going to use it at once. There are a couple of episodes on the channel showcasing chestnut pasta - Cicci and Vincenzina from Liguria make different styled trofie. I was sent a large box of chestnuts by a friend who knows I love them & have some left so was wondering about the pasta. May use them for making a filled pasta them.     These look so good! A friend introduced me to this channel recently and I've just finished watching all the back episodes. I've made fresh pasta three times since I started watching! I love the grannies because they remind me of my own (non-Italian) granny. I miss her and the package of hand-rolled, hand-cut egg noodles I would get every Christmas.

    I love each and every one of the videos on this channel! I am Italian, but it's almost 10yrs I live in the UK now, since I was 19. Nonna used to make Apulian traditional pasta like "Sagne" and "orecchiette e maccheroncini" and mamma always used to make fresh gnocchi, orecchiette, and tria, not so often now that she lives on herself! Thanks to pasta grannies, I've discovered so many pasta shapes I was unaware of, like these two! It's such a wonderful channel! That really shows how beautiful our nonnas are! They really are our national treasure. I loved how she showed her old photos, I hope to see more photos too in future videos! I love vintage photos, see who they were as young ladies!     What beautiful respect for the pasta dough and the simplicity of the sauce. We live nearby in Abruzzo (TE) where you see much of the same thing, with a similar use the soffritto of onion/celery/carrots as a base for the sauce. Brava, Lina!

    Ms. Vicky, very nice recipe & looks delicious & Ms. Lina is a great chef. I like the peas, fresh or frozen like Ms Lina used , but not the mushy canned ones. I saw the folks in the U.K. eat the canned ones & mash them up, i don't care for those. In Appalchia many folks grow peas in their garden & eat them fresh & freeze the rest. We put them in a salad spinner to remove as much moisture as we can before freezing in freezer bags. God bless you all & please stay safe, btw, that salad spinner is handy & can be used for many items like the peas, potatoes, etc...

    hi Steve, there is nothing quite like picking peas and eating them straight away! Mushy peas are definitely an acquired taste - I think they are served with either battered fish, or boiled ham 😀🌺 best wishes, Vicky

    Made this-scrumptious! Making the "cat's ear" pasta was a breeze, after watching her. Sadly, didn't have her, no doubt, delicious sausage, but this dish is a keeper
