Soup is considered an essential dish to complete a Chinese dinner. If you're thinking of what to cook for your Chinese New Year Reunion Dinner, try making this super easy Abalone and Winter Melon Soup. If you're not a fan of abalone or you just wanna make some soup for your day-to-day non-festive meal, , just omit abalone from this recipe entirely and this will still be super yummy. In fact, Roland cooked this for our loved ones last month without abalone and they loved it so much. Everyone of them had at least two bowls of soup. Woohooz! Try it and let us know what you think.

Ingredients:
Serves 8 - 10 pax
1kg of chicken feet
2 large pork bones
4L of water
600g of pork soft bones
800g of winter melon
30g of dried scallops (soaked in 1 cup of hot water)
1L of water
1 can of baby abalone
2 teaspoons of salt or to taste

    If i,boil the abolone to long will it turn hard? i,bought the frozzen steak's do i,cut them in small piece's. thank you.

    Hi Bertha. Your frozen abalone steak - are they cooked already? The canned ones are already cooked so we just need to add them to the soup towards the end just to warm them up. We’re not so sure about the one you have though.

    Hi Wendy. Frozen or fresh abalone gotta be cooked in a different way. You’ll need to cook them for a much much longer time otherwise they’ll be really tough. To shorten the time, you can consider pressure cooking them with the stock. Your soup will be really awesome. Just thaw them completely in its packaging but putting them in room temp water. Scrub them clean before cooking. Hope this helps. Maybe we should make one video using the same abalone soon. Happy cooking!

    Maybe instead of pork bones, I’ll use the Chinese ham bones ,, just imagining the taste when I was young my grandma cook that way ,, but of course including chicken feet .. cheers

    Hi Roland, may I ask if you know the frozen baby abalone sold at the supermarket works the same with the brine canned baby abalone? Have you tried it before?

    Hihi. They’re different. The ones in cans have been cooked for a long long time that’s why they’re rather tender. For those frozen ones, you’ll need to pressure cook them for about 5 - 6 hours for them to be tender. Hope this helps.

    Hihi. To make winter melon tea, you gotta use preserved winter melon. It’s coated in sugar. Hope this helps. Happy cooking!

    Can the chicken feet be fried to make another dish instead of discarding them?

    Hi Ltte. You can but you’ll need to dry them out to the max otherwise the oil will splatter like fire cracker. We wouldn’t recommend though. They would be too mushy after such long cooking time. Hope this helps.
