    Love the idea to use the parsley as a salad almost! Flatleaf parsley really is delicious

    I absolutely love mackerel and its plentiful in the Irish Sea, where I go fishing quite a lot to catch them.

    In my opinion,Lentils+fish+dill (winter is coming)= combo wombo.Especially ,if the lentils are cooked in stock with a couple of bay leaves,is better.

    Overall I think its amazing what can be done with leftovers, when we think that it is destined for the bin it can be resurrected.

    Or for the same 'kick', you might try (very) thinly sliced jalapeno chili (raw or pickled)

    a good olive oil does not have to be greek.... the same way a good wine does not have to be french
