Maamoul معمول
are small shortbread pastries filled with dates, pistachios or walnuts ,very popular in Palestine, Jordan, Syria, Lebanon, and other Levantine countries..People keeps a stock of them all year round, but they are particularly used on religious festivals.
Muslims eat them at night during Ramadan and on the Eid al-Fitr and Eid al-Adha holidays,
Arab Christians eat them in the days before Lent, on Easter Sunday and on the feast of Epiphany.
INGREDIENTS:-
المقادير:
fine semolina 500g
غرام 500 سميد متوسط الحبه
ghee or melted butter 150g
غرام 150 السمن أو الزبدة المذابة
vegetable oil 1/2 cup
نصف كوب زيت نباتي
all-purpose flour 1-1/2 cup
واحد ونصف كوب طحين لكل الاستعمالات
powdered milk 1/2 cup
نصف كوب الحليب الجاف
powdered sugar 1 cup
كوب واحد سكر ناعم
nutmeg powder or mahlab 1tsp
واحد ملعقة صغيرة مسحوق جوزة الطيب أو محلب
baking powder 1/2 tsp
نصف ملعقة صغيرة مسحوق الخبز
salt a pinch
قرصة ملح
milk 1/4 cup
ربع كوب الحليب
vanilla extract 2 tsp
اثنين ملعقة صغيرة مستخلص الفانيليا
for yeast mixture
sugar 1 tsp
water 1/4 cup
instant dry yeast 1 tsp
لخليط الخميرة
ملعقة صغيرة من السكر
ربع كوب ماء
ملعقة صغيرة الفورية الخميرة الجافة
rose water 1/4 cup
ربع كوب ماء روز

This is not just a recipe it’s a work of art all together.Congratulations
I tried these. They were absolutely delicious and fragrant. A family member said they were better than the ones he had in the UAE. I mixed 1tsp rose essence with regular water (instead of rose water) in the dough. I added orange blossom water to the walnut filling instead of regular water and I also added 1.5 tsp of cinnamon and Mahlab each in the date filling. Thanks for sharing.

Every year i made this for eid 🌙 here in my country we usually don’t make maaamoul for eid we make other pastries but since i made it my family kept asking me to remake it , this recipe is by far the best 😄❤️ my favorite flavor are pistachio and the one with dates, the combo is amazing must try it 🙌🏻 thank you so much

This recipe is my favorit. I used to make it since 2004. But the way of presented in this video makes it something from one thousand and one nights.
This is my second time making Mamoul and it is absolutely delicious.I got Mamoul mold (present from my daughter in-lows) and I love them. The best recipe for any occasion or just for Monday like I did today.Thank you for a great presentation.

علشان عجبتنى الوصفة سوف أترجمها للعربيه لوجه الله الكريم نصف كيلو دقيق سمولينا مع نصف كوب زيت مع ١٥٠ جرام ذبده ونغلفها ونتركها فى الثلاجة لمده ٢٤ ساعه ثم نوضع كوب ونصف دقيق ونصف كوب لبن بودره مع كوب سكر بودره. ثم ملعقه جوزه الطيب او حبهان مع رشه ملح وملعقه بيكنج بودر ثم ربع كوب لبن مع فانيليا وملعقه خميره مع شويه سكر مع شويه لبن دافىء ثم ربع كوب ماء الورد تعجن وتترك لمده ساعه قبل التشكيل. الحشوه ربع تمر مع ملعقتين زيت. او فوزدق. مع ٦ معالق سكر و٣ معالق ميه او عين الجمل مع ٦ معالق سكر مع ملعقه قرفه و ٣ معالق ميه او حشوه العجوه والسمسم من الخارج. اختكم ام عمر من لندن
